This slimming friendly Seafood Paella really brings a bit of Spanish sunshine to dinner time – no matter what the weather’s like outside!

We used Lidl’s Scottish Cooked Mussels in White Wine Sauce for this Seafood Paella – paella always tastes better with a splash of white wine! You can also buy these mussels in a garlic butter sauce which is amazing too!

When you’re making paella, it’s really important to use the correct rice. Long grain or basmati rice won’t work, so you should choose either paella or risotto rice for this recipe. Don’t forget that making paella is very different to making risotto, so don’t be tempted to keep stirring this like you would a risotto!

This Seafood Paella easily serves 3 people and it makes a fantastic dinner party dish. Served in the pan at the table, it’s really got the wow factor – no one will ever guess how easy it was to make!

It can be made gluten free as long as you swap out the following ingredients for gluten free versions:

Lidl Mussels

You may have seen the #lidlsurprises advert on TV for Lidl Mussels. You know the one. A guy is very sceptical about where the mussels come from, so he’s then sent off to see where they are produced.

We have to admit that we were also a bit wary about the quality of the mussels from Lidl. It’s probably just human nature to question how something that doesn’t cost an arm and a leg can be high quality. So, with this in mind, Lidl sent us to the Isle of Mull!

We didn’t get to go on the mussel boat – which considering the wet and windy weather may have been a good thing! – however, we did get to see the very Loch where the mussels are produced, and we have to say it was beautiful.

The water is perfectly clear, and the air is so fresh. The only way to describe it is like the smell of the sea with a hint of pine. The mussels are caught on ropes – almost like a swing really!

Needless to say, the whole experience addressed any concerns we had about the quality of the mussels.

While we were on the Isle of Mull we were also lucky enough to visit Cafe Fish in Tobermory. It’s the only place on the Isle of Mull that serves the very same mussels that are sold in Lidl.

We eat a lot of seafood, and the seafood from Cafe Fish is the best we’ve tasted. Ever. If you ever get a chance then it’s well worth a visit.

Finally to round off our little mussel adventure we attended the Lidl Mussel Beach event, which brought the Isle of Mull to London.

The Marine Stewardship Council (MSC)

Another thing to mention is the mussels from Lidl are MSC certified. This means that the seafood has been caught by fisheries that actually care about the environment. The MSC set standards for sustainable fishing and supply chain traceability. That can only be a good thing for the fish, us, and for seafood supplies in the future.

How many calories are in this Seafood Paella?

There are 552 calories per portion in this Seafood Paella, which means it falls into our Special Occasion category.

This Seafood Paella is perfect if you’re following a calorie controlled diet and fits well with any one of the major diet plans such as Weight Watchers.

As a guide, an average man needs around 2,500kcal (10,500kJ) a day to maintain a healthy body weight. For an average woman, that figure is around 2,000kcal (8,400kJ) a day. Step 1

In a paella pan or very large frying pan, spray a little low calorie and cook the chicken until it starts to brown.

Step 2

Add the onion and garlic to the pan and continue to cook until it’s softened.

Step 3

Stir in the paprika and rice.

Step 4

Pour over the stock and stir well. Cover and leave on a medium heat for 10 minutes.

Step 5

Add the red pepper, green beans, peas, king prawns and gently mix. Cover and cook for a further 8 minutes.

Step 6

Remove the lid and stir in the Lidl mussels (including the sauce) and place the whole tiger prawns at regular intervals on the top of the paella.

Step 7

Cover and cook for 5 minutes until the shellfish is cooked and heated through.

Step 8

Check the seasoning and add a little sea salt if needed.

Step 9

Top with lemon wedges and serve immediately.

Serve by itself as a special indulgence, or cut the portion size in half and enjoy this Seafood Paella with a beautiful, fresh salad and a slice of crispy bread.

How do you know when Seafood Paella is cooked?

To start your Seafood Paella, you’ll need to cook your chicken until it starts to brown before you add any of your other ingredients.

You’ll know that your Seafood Paella is cooked when your shellfish are cooked and heated through and your rice is tender.

Standard advice here in the UK is to cook food until it has reached 70°C and stayed at that temperature for 2 minutes. This is to keep your family safe.

How long can you keep Seafood Paella in the fridge?

Once you’ve put it out, ideally you should eat it within an hour.

If you allow any leftovers to cool, make sure to refrigerate in a container with a lid and chill. You can keep leftovers of Seafood Paella in the fridge for one day.

As we all know you can get food poisoning from eating reheated rice, but, it’s not actually the reheating that can cause issues, it is, in fact, the way that the rice has been stored beforehand where the problem begins.

Rice can contain spores that are resistant to heat and can survive the cooking process.
If cooked rice is left standing at room temperature these spores can grow into bacteria. At this point, the bacteria can be destroyed by reheating the rice thoroughly.

You should remember to do the following if you’re going to keep leftover rice:

  • Cool the rice as quickly as possible (ideally within one hour) then put it in the fridge immediately. You can split larger portions up into smaller batches to cool quicker.
  • Reheat and use any leftover rice (stored in the fridge) within one day.
    When you reheat any rice, always check it is steaming hot all the way through.
  • Don’t reheat cooked rice more than once.

Can I freeze Seafood Paella?

How do I reheat Seafood Paella?

From chilled: Place in a microwave proof container with loosely fitting lid and heat for 4-7 minutes until piping hot.

Ingredients

  • 300 grams paella rice you can use risotto rice if you can't get paella rice
  • 1 red onion finely chopped
  • 1 red pepper cut into strips
  • 100 grams green beans cut in half
  • 100 grams peas
  • 1 clove garlic finely crushed
  • 100 grams king prawns
  • 1 packet Lidl Ocean Sea Scottish Cooked Mussels in a White Wine Sauce
  • 6 Lidl Fantail Prawns
  • 1 Lidl Chicken Breast cut into pieces
  • 600 ml chicken stock made up with 2 Chicken Oxo Cubes
  • 1 tsp paprika
  • 1 lemon Cut into 6 wedges
  • low calorie cooking spray
  • sea salt to taste

Instructions

Gorgeous! Tastes really creamy and rich… but it makes A LOT! I would say it would easily feed four. We made it for 2 of us, both had 2 big bowl fulls and there’s still half left.
