You could adjust the flavours in this recipe to suit your tastes – it would work really well with a sprinkle of chilli powder for a spicy kick, or replace the parsley with chives!

There are no special ingredients for these Chicken Goujons. They are all readily available at all supermarkets.

Making breadcrumbs is so easy with one of these Mini Electric Choppers which you can get on Amazon.

They’re a really useful gadget for whizzing up herbs and spices, as well as making breadcrumbs. You can even use it to make hummus!

This Mini Electric Chopper is a real space saver when compared to a full size food processor, so it’s great if you’re pushed for space…or have a cupboard full of gadgets (totally guilty of that one!)

How do I know when these Chicken Goujons are cooked?

When cooked, the breadcrumbs should be crisp and golden and the chicken inside should have no sign of pink. Standard advice here in the UK is to cook food until it has reached 70°C and stayed at that temperature for 2 minutes. This is to keep your family safe.

How long can you keep Chicken Goujons in the fridge?

Any leftovers should be cooled and refrigerated as quickly as possible, and can be stored in the fridge, in an airtight container for up to 3 days. They are great eaten cold, but if you want to reheat, you must ensure they are piping hot and have reached 70ºC for 2 minutes. Never reheat more than once!

Can I freeze these Chicken Goujons?

INGREDIENTS

INSTRUCTIONS
  1. Preheat oven to 180ºC, line 2 large baking sheets with greaseproof paper and lightly spray with Frylight.
  2. Break the bread into pieces and place into a mini chopper, along with the parsley, garlic, salt, pepper, mustard powder and the finely grated rind of the lemon.
  3. Beat the eggs and place into a shallow dish. Place the breadcrumb mix into a separate dish.
  4. Cut each chicken breast into strips (they should be around 1.5cm thick each). Dip each piece into the egg and then pop into the breadcrumb mix to lightly coat.
  5. Once coated, place each piece onto the baking tray. Squeeze over the juice of the lemon.
  6. Spray the chicken with low calorie cooking spray and place into the oven for around 25 minutes until golden brown and cooked through. Serve with your choice of accompaniment!

      No, you do not need to toast the bread. One tip for breadcrumbs is to use slightly older slices of bread as they tend to crumb a bit more more easily

  6. Can I replace the lemon with chilli to make garlic and chilli Goujons or would that make the mix too dry?? Also do you freeze once cooked or raw after coating. Thinking of making for a get together with friends so would be good to pre make and put in the oven later to eat hot

    I really want to try these but my partner is allergic to egg. Is there any other way of making these without dipping the chicken in the egg then the breadcrumbs? Would milk work?
