These slimming friendly Mini Chocolate Christmas Pudding Cakes are the perfect festive treat and are great if you’re counting calories or following a plan like Weight Watchers.

We’re big lovers of a good Christmas pudding, but sometimes it’s just far too heavy to eat a portion of – not to mention the calories and Points!

Our Mini Chocolate Christmas Pudding Cakes have all the flavours of a traditional Christmas pudding, but they’re much lighter and are also slimming friendly!

They’re perfect when served as part of a Christmas buffet and can even be enjoyed as an afternoon snack – they’re so low in calories and Points, that you could probably manage a few!

What diets are these Mini Chocolate Christmas Pudding Cakes suitable for?

This Mini Chocolate Christmas Pudding Cakes recipe is suitable for vegetarian diets.

It can be made dairy free as long as you swap out the following ingredients for dairy free versions;

  • Cocoa powder (most brands are dairy free, but please do double check)

Please make sure to double or triple check all of your ingredients if you’re cooking for people with allergies.

Do you need any special ingredients to make Mini Chocolate Christmas Pudding Cakes?

We’ve used Scan Bran in this recipe and, in our opinion, the only way worth consuming it is when it’s in a chocolate cake!

You can buy Scan Bran via some places online and some high street shops like Holland & Barrett.

Chocolate extract is amazing! A great way to add chocolate flavour, without any extra calories.

We’ve used a little silicone bundt cake tin to make these, but you could also use a mini cake tin instead if you prefer. The bundt tin makes them look more attractive in our opinion, but it’s entirely up to you!

Due to the batter being a little heavier, it is prone to stick so make sure you use a good spray of low calorie cooking spray.

We use a sweetener called Sukrin Gold, which has the same sweetness to weight ratio as sugar.

It’s also pretty close to brown sugar in taste and texture. You don’t need to use it (you can use whichever sweetener you like!) we just prefer it as there is no nasty, artificial aftertaste.

You can buy Sukrin from Amazon or via the Sukrin website.

If you are using a powdered sweetener, then please check how it compares to sugar. In some cases you’ll need to use less, as powdered sweeteners weigh less.

That being said you don’t have to use Sukrin – there are lots of other high quality granulated sweeteners available from the supermarket, such as Canderel Sugarly, and Natvia.

Step 1

Soak the Scan Bran in boiling water.

Pre-heat the oven to 180°C and spray your silicone mini bundt tray with some low calorie cooking spray.

When the Scan Bran has softened, drain it well and mash it up with a fork.

Step 4

Whisk the eggs with the granulated sweetener until it has dissolved, then add the cocoa powder, mixed spice, chocolate extract, zest, cherries and whisk again.

Step 5

Add the drained Scan Bran and mincemeat. Mix it well to combine all the ingredients.

Step 6

Divide the mix between the 32 muffin cases and bake for about 15 – 20 minutes until they are firm. They should be spongey when you press down lightly and spring back.

Step 7

When they are cooked pop them out of the moulds to cool.
