Cut each parsnip into approx 6cm lengths. Leave the thin end whole but cut the thicker pieces into 4 wedges. Place them in the boiling water and simmer until they are just tender (probably around 4 or 5 minutes).

Drain the parsnips and place them in a decent sized bowl.

If you are using set honey put the 2 teaspoons in a small heatproof dish and place it in a shallow dish of hot water, until the honey has melted. There’s no need to do this if you are using runny honey.

Season the parsnips with a little sea salt and freshly ground black pepper. Spray with a decent amount of low calorie cooking spray then pour over the honey and mix well so that all the parsnips are coated.

Place on a nonstick baking tray (or a tray lined with foil) Give them one last spray with low calorie cooking spray and cook for 20 – 25 minutes (turning halfway through) or until they are crisp and golden.

  • freshly ground black pepper
  • low calorie cooking spray

    Hi Claire, yes the recipe as it stands is not vegan due to the honey however we have included a note in the recipe information to say it can be made vegan as long as you substitute for a honey alternative, hope that helps!
