Lasagne Courgette Boats

These slimming friendly Lasagne Courgette Boats are a fun twist on a classic, perfect for anyone counting calories or following plans like Weight Watchers!

I love pasta. In fact I think I love pasta more than life itself sometimes, and I could eat it at any time, night or day. Maybe that’s one of the reasons I piled on the pounds!

I have PCOS, and losing weight is hard enough, but with added carbs, makes it even harder.

I tend to lose a lot more when I lay off the spuds and pasta, so I’ve been trying to reduce the amount of carbs I eat.

All of this got me thinking… how could I recreate something classical pasta-centric without losing taste or texture & I came up with these Lasagne Courgette Boats. There is tonnes of low carb veggies packed into these Lasagne Courgette Boats!

If you want to add even more vegetables to your meal you could even serve it up with our Spiralized Apple and Beetroot Salad.

You don’t even waste the scooped out courgette pulp. Add that to the classical sofrito base, Cirio tinned tomatoes and Turkey mince and we’re on to a winner!

Don’t worry about the Bolognese sauce being very strong in flavour. It needs to be as it’s going in the courgette which will absorb the flavour. Make sure to give the oven tray with a good Spray of low calorie cooking spray as you don’t want them to stick.

INGREDIENTS

INSTRUCTIONS
Prepping the Boats
  1. Cut the courgettes in half and scoop out the middles making sure to leave an edge to the "boat" - you don't want Bolognese sauce to escape! Make sure to reserve the scooped out pulp, we'll use this in the sauce
  2. Spray a baking tray with a few sprays of low calorrie cooking spray, put the courgettes on top and sprinkle with a little salt. Place in the fridge whilst we make the filling
Bolognese Sauce
  1. Spray a large frying pan with some low calorie cooking spray and bring up to the heat
  2. Gently fry the onions and mushrooms until the onions just start to colour then add the turkey mince & Spicentice Italian Rub. Stir often for about 5 minutes
  3. Add in the carrot, celery, bell pepper, courgette pulp and spring onion and stir well for 2 minutes
  4. Add in the carton of tomatoes, crumble in the stock cubes & Balsamic and stir until the pan bubbles. Once you see bubbles turn down and simmer for 20 minutes
Filling & Cooking the Boats
  1. Remove the courgette boats from the fridge & dab any excess moisture with some kitchen roll
  2. Spoon in the Bolognese filling, and top with the grated cheese. Grind some black pepper over the top & place into the oven for 30 minutes at 200°C
  3. Remove from the oven and enjoy!
