We love pancakes! These slimming friendly Bacon and Maple Blueberry Pancakes are a perfect, filling breakfast for Pancake Day.

Despite its popularity in the US, we’d never tried bacon and maple syrup together. To be honest it wasn’t a combination that had ever taken our fancy. However, we thought we’d give it a go – and we’re glad we did! Bacon and Maple and Blueberry Pancakes have become a firm favourite of ours.

We use Ready Brek instead of traditional flour. We love the texture this gives the pancakes, and it is high fibre so it will fill you up for longer. Feel free to use an equivalent measure of oats, blitzed in a food processor. We love the convenience of Ready Brek. Anything to make mornings simpler!

I added the blueberries into the pancake mix, as I love the flavour of blueberries when they have been heated.

Pour in small amounts of the mix to make 2 pancakes. Allow to cook through until brown underneath, then turn and cook for a few more minutes.

Place one pancake on a plate, then arrange a piece of bacon slightly overlapping. Continue with the rest of the pancakes and bacon.

How do you know when Bacon and Maple Blueberry Pancakes are cooked?

  • 40 g Ready Brek
  • 50 ml milk
  • 1/2 tbsp granulated sweetener
  • 1 tsp vanilla extract
  • 3 tsp maple syrup
  • 4 bacon medallions
  • 75 g fresh blueberries
  • low calorie cooking spray
  • 2 eggs

    If you scroll down to the end of the page you’ll find the recipe card which states the servings. This recipe serves one, however it’s entirely up to you. If you think it’s too big a portion for you, you can half the recipe and the calories.

in some of your pancake recipes there are 2 eggs and others there are no eggs. Why is this?

    Hi Debbie,

    It really depends on the recipe – it means there are different options for people. If a pancake recipe doesn’t use eggs, it normally relies on the binding properties of the oats to hold the pancake together ????
