Although we’ve called this recipe a Breakfast Quiche, there’s nothing stopping you from enjoying this for lunch or even at dinner!

We’ve used mushrooms and tomatoes in this recipe, but you can also add any extra veg that you have lying around – onions, peppers or even spinach would all work really well.  We’ve also added a couple of tablespoons of quark to this recipe, just to make the egg that bit creamier.  If you’re cooking for dairy free diets (or just really can’t stand quark!), then this recipe would still work really well without it.

Enjoy our Breakfast Quiche hot or cold with plenty of vegetables, or it would also be fantastic as part of a picnic or lunchbox.

Most supermarkets have a low calorie sausage product available that will work really well in this recipe.

How do you know when this Breakfast Quiche is cooked?

You’ll need to cook this Breakfast Quiche for around 25-30 minutes or until it’s set and golden in colour.

Standard advice here in the UK is to cook food until it has reached 70°C and stayed at that temperature for 2 minutes. This is to keep your family safe. 

How long can you keep Breakfast Quiche in the fridge?

Once you’ve put it out, ideally you should eat it within 4 hours.

If you allow any leftovers to cool, make sure to refrigerate in a container with a lid and chill.  You can keep leftovers of Breakfast Quiche in the fridge for approximately 3 days or so.

Can I freeze this Breakfast Quiche?

Yes you can! This recipe can be frozen, but please remember to do the following;

  • Freeze it as soon as it is cold enough.

How do I reheat this Breakfast Quiche?

You can enjoy this dish hot or cold!

To reheat from chilled: Place in a microwave proof container with loosely fitting lid and heat for 4-7 minutes until piping hot.

To reheat from frozen: Allow to defrost, and heat covered in the microwave for 5-8 minutes or until piping hot.

Ingredients

  • 2 low fat sausages cooked and sliced
  • 5 bacon medallions cooked
  • 6 - 8 mushrooms sliced
  • 3 tomatoes sliced
  • 8 eggs
  • 2 tbsp quark
  • sea salt
  • freshly ground black pepper
  • 1 sprig fresh parsley chopped

Instructions

  1. Pre heat the oven to 190°c.
  2. Cook the sausages and bacon medallions. You can do this in advance and keep them in the fridge until you're ready for them.
  3. Arrange the sausage slices in the bottom of an 8 inch round silicone cake mould. Place the cooked bacon medallions on top, followed by the sliced mushrooms then the sliced tomatoes.
  4. Crack the eggs into a large bowl or jug, add the quark and some salt and pepper, then whisk until they mixed well and there's no lumps or quark. Pour the eggs into the cake mould, then sprinkle the chopped parsley on top.
  5. Cook at 190°C for 25 - 30 minutes, or until the quiche is set and golden in colour.
  6. Serve warm or cold with a good helping of vegetables!

    Hi Marina, the quark adds a little creaminess but you can leave it out if you prefer and the quiche will still taste great. Alternatively, you could use another creamy soft cheese such as cottage cheese (blitz it first to make it smooth), plain fromage frais or you could use plain fat free Greek yoghurt. Hope this helps.

      Hey Emily, we work out our recipes on the serving size not by weight. To work out your own weight of a serving you would need to make the finished dish and divide servings, as the weight will vary due to variation of ingredients and water content it’s not something we can do as an exact measure. If you scroll down to the recipe card at the bottom of the page on the website there is a little arrow by servings and you can alter up or down to serve more or less people. Hope that helps!

    Hi Amanda, yes you can use a ceramic quiche dish you may need to spray it with a little low calorie cooking spray to stop it sticking but it will still work great!

    Hi Karen, it could be that your oven is cooler than ours we use fan assisted ovens for all of our recipes. You could try increasing the temperature slightly and continue to cook until the quiche is set and golden in colour. Hope that helps!

    Hi Lynn, I’m sorry you’ve had trouble with the Breakfast Quiches. You could try cooking the mushrooms first to remove some of the moisture or cook the quiche for slightly longer. Hope that helps!
