A Manchester Tart is a traditional baked tart consisting of a shortcrust pastry shell, spread with raspberry jam, covered with a custard filling and topped with flakes of coconut. It’s very popular ‘up north’.

Our Manchester Tart Baked Oats has all the flavour of the famous recipe, but without all the calorific ingredients, making them perfect as a slimming-friendly breakfast or dessert!

Step 1

Add all of the ingredients, except the jam, into a bowl and mix until combined.

Step 2

Pour into an oven proof dish and place on a baking tray (the mixture tends to rise a bit and we don’t want to clean the oven, thank you very much). Bake on about 180°C for 35-40 minutes.

Step 3

When cooked, mix the jam with the water and warm slightly in the microwave, then pour over the top of the oats and spread it around. Enjoy.

Ingredients

  • 40 g oats
  • 120 g fat free Greek style coconut and vanilla yoghurt
  • 50 g fat free natural yoghurt
  • 1 tsp vanilla extract
  • ¾ tbsp granulated sweetener
  • 2 eggs you can use 1 egg if you prefer a slightly drier texture
  • 1 tsp jam
  • 1 tsp warm water

    Some people like to use 1 egg rather than 2 (we prefer 2) so maybe using 1 would suit your taste better 🙂
