If you’re looking for a Simnel cake that’s low on calories and Points, then these Marzipan Easter Eggs are just the thing!

They’e so quick and easy to make – no whisking or folding of the egg whites required!  We like to add a little yellow food colouring to the mixture, just to brighten them up but this is completely optional.

Our Marzipan Easter Eggs have a classic almond flavour, but if you’re not keen on almond then you could use any other flavour – pretty much any flavouring would work really well.

You can also get really creative with these Marzipan Easter Eggs which is a great way to keep the kids occupied during the holidays.  We’ve decorated ours with icing and sugar balls, but the sky really is the limit!

Our almond flour of choice is Sukrin Almond Flour as it is also reduced fat and you can pick some up on Amazon UK. 

You could also use any defatted almond flour but just make sure you check the nutritional values as they do vary depending on brand.

We’ve also used Sukrin Gold in this recipe which is an all-natural granulated stevia sweetener alternative to sugar with zero calories. You can grab Sukrin Gold over on Amazon UK.

Sukrin Gold doesn’t have that strange after taste that a lot of artificial sweeteners do! It also shares the exact same sweetness and weight to sugar, unlike powdered sweetener.

If you are using a powdered sweetener, then please check how it compares to sugar. In some cases you’ll need to use less, as powdered sweeteners weigh less.

That being said you don’t have to use Sukrin – there are lots of other high quality granulated sweeteners available from the supermarket, such as Canderel Sugarly, and Natvia.

How do you know when these Marzipan Easter Eggs are cooked?

You should cook these Marzipan Easter Eggs for around 20 minutes or until they’re cooked through and golden.

Standard advice here in the UK is to cook food until it has reached 70°C and stayed at that temperature for 2 minutes. This is to keep your family safe.

Marzipan Easter Eggs

These Marzipan Easter Eggs have that lovely almond flavour of a traditional Simnel cake and are slimming friendly, low in calories and Points!

Ingredients

  • 2 tbsp granulated sweetener
  • 3 large eggs
  • 25 g defatted almond flour such as Sukrin Almond Flour
  • 1 tsp baking powder
  • 1 tsp almond extract
  • icing sugar and sugar decorations optional for decorating

Instructions

  1. Preheat the oven to 160 degrees. In a jug, whisk the eggs and granulated sweetener until fluffy.
  2. Add the defatted almond flour, baking powder and almond extract and whisk again. Leave to stand for a minute to thicken.
  3. Pour into Easter egg shaped silicone moulds. This made 10 in the mould we used but will depend on the shape and size of your mould. Do not fill completely to the top as the cakes will rise in the oven.
  4. Bake for 20 minutes until cooked through and golden. Take out of the oven and leave to cool in the silicone mould for 5 minutes before carefully pushing them out onto a wire rack.
  5. When completely cool, decorate to your liking!

Hi, if substituting coconut flour instead of almomd would you use the same amount?

    Hi Jennifer
    Coconut flour is very absorbent and soaks up a lot of moisture. Replacing it means that you would have to adjust the amount of liquid and/or eggs added, as well as using less coconut flour than the recipe states. An approximate ratio is 1 cup of normal or almond flour to 1/3 to 1/4 cup of coconut flour.
