Chocolate Mud Pie - Pinch of Nom Slimming Recipes

For the full list of ingredients and comprehensive instructions, please see the recipe card at the end of this post. Before you scroll, there’s important stuff to know in the blurb!

This delicious recipe came from one of the members of our Facebook group. Janet has been a member of our Pinch of Nom Facebook group member for a while now and really enjoys posting on the page and reading other people’s inspirational posts.  She describes herself as the resident baker at her local weight loss group and we loved her recipe so much that we just HAD to share it with you!

The coffee in this recipe is a clever addition as it gives it the hint of bitterness that you’d get from a good dark chocolate, without the additional Points or calories.  If you don’t like coffee, then this can be left out but we think that it really does add to the depth of flavour.

Although it doesn’t have a biscuit base, the clever oaty topping on this Chocolate Mud Pie really gives it some crunch. It will last for several days in the fridge…if you can resist!

You can enjoy this recipe on its own or even serve it with some fresh fruit – strawberries or raspberries would be soooo delish!

What diets is this Chocolate Mud Pie suitable for?

This Chocolate Mud Pie recipe is suitable for gluten free diets, but please do double check your chosen brands of cornflour and oats to make sure!

Please make sure to double or triple check all of your ingredients if you’re cooking for people with allergies.

Do I need any special equipment to make this Chocolate Mud Pie?

You’ll need a couple of things for this Chocolate Mud Pie.

The chocolate extract we use in this recipe adds that extra chocolate hit without the added Points and calories.

First you’ll need an 8 inch loose bottomed cake pan, like this one on Amazon.

You’ll also need a fine grater like this one. Using one of these makes your grated chocolate or cheese go so much further. You can pick one up on Amazon as well.

You can pick up this chocolate extract from most supermarkets, or on Amazon!

How many calories are in this Chocolate Mud Pie?

Standard, shop-bought cheesecakes tend to have hundreds of calories for just a small sliver, but this Chocolate Mud Pie is different and will really sort out a chocolate craving!

Our Chocolate Mud Pie has just 125 calories per portion which means it falls into our Everyday Light category.

This Chocolate Mud Pie is perfect if you’re following a calorie controlled diet and fits well with any one of the major diet plans such as Weight Watchers.

As a guide, an average man needs around 2,500kcal (10,500kJ) a day to maintain a healthy body weight. For an average woman, that figure is around 2,000kcal (8,400kJ) a day. For the mud pie

Step 1

Preheat the oven to 200°C, and line an 8 inch, loose bottomed cake tin with baking parchment.

Step 1 pinchofnom.com

Step 2

In a large bowl, mix together the quark, Philadelphia, eggs, granulated sweetener and chocolate extract. Add the coffee granules to the boiling water and add to the mixture. Sift in the cornflour and cocoa powder and stir well to ensure it is thoroughly mixed.

Step 2 pinchofnom.com Step 2 pinchofnom.com

Step 3

Pour the mixture into the lined cake tin and bake for 10 minutes in a hot oven. Turn the oven down after this time to 140°C and bake for a further 25 minutes. Check the cheese cake after this – it should have a slight wobble with no runniness.

Step 4

Leave to cool completely and refrigerate for an hour before adding the topping.

For the topping

Step 1

In a dry frying pan, add the caster sugar and oats. It is important to use sugar and no sweetener for this. Leave on a moderate heat, moving the pan occasionally until the sugar has melted and oats have toasted. Leave to cool.

Step 2

Once the cheesecake has been refrigerated, take the choc shot and spread gently around the edge of the top of the cheese cake. Crush up the caramelised toasted oats as you sprinkle them around the edge and pat gently so they stick to the choc shot.

Step 3

Using a fine grater, grate over the dark chocolate into the centre of the cheesecake. Carefully remove from the tin and slice into 10 pieces and serve.

Made this today and whilst it was super easy to make and looks great, I find the taste very bitter! I wonder if the coffee I used was too strong?

Reply

    HollyWednesday 7th October 2020

Hi Sean, it may have been the coffee brand you have used like you suggested it could also be the sweetener. We use Sukrin 1 which doesn’t have that strange aftertaste that a lot of artificial sweeteners do. It also shares the exact same sweetness and weight to sugar. If you are using a powdered sweetener, then check how it compares to sugar. In some cases you’ll need to use less, as powdered sweeteners weigh less. Hope that helps!

This might sound like a stupid question haha…but when do you remove it from the tin you baked it in?
Does it get refrigerated still in the tin?

Reply

    SharonMonday 6th July 2020

Hi Kristin, yes, the Chocolate Mud Pie is chilled in the fridge in the tin. Carefully remove it from the tin just before slicing and serving it. Hope this helps.

Can you use any other extract other than the chocolate one please?

Reply

    Holly LevellTuesday 2nd June 2020

Hi Claire, the chocolate extract is to add further flavour to the Chocolate Mud Pie. In our facebook group some members have suggested salted caramel flavouring so you could try that too!

Choc shot is liquid chocolate sauce from a company called Sweet Freedom – off to Waitrose to see if can find!

I’d love to make this but can not eat cheese. I can just now tolerate quark. Is there a way you could make this by substituting the Phili cheese with something else?
Thanks

Made it today & it was absolutely delicious. Only problem is, it’s more like a mousse texture & as it’s standing in the fridge, loads of liquid is seeping put onto the plate. What have I done wrong???

What’s a choc shot? Wondering if you could reduce this further by using Natvia instead of the syrup for the sweetness.

You can get it in Waitrose or online. You could add some extra coffee, it just might not taste as chocolatey ????

You could maybe use some caramel or salted caramel essence or extract instead

Could I use xantham gum instead of corn flour to make it gluten free?

Reply

    KateFriday 17th March 2017

    Hi Lindsey
Cornflour is gluten free, and often used in gluten free cooking. But you could use xanthan gum if you prefer

    Reply

LisaTuesday 14th February 2017

Hi, I do not have Sukrin so what alternatives can I use? I was thinking Truvia but how much would I need as its very sweet

Reply

    KateTuesday 14th February 2017

    Hi Lisa
Yes you could use Truvia. Sukrin is exactly the same consistency, weight and sweetness of normal sugar, so you can use it as a direct replacement for sugar. Other sweeteners are a lot sweeter and weigh much less, and they can differ greatly. It would probably be a good idea to check out the website for the sweetener you choose. You should find the conversion rate of sweetener to sugar

Chocolate extract? What is it and where can I get it?
Thanks!

Reply

    KateMonday 6th February 2017

    Hi Sarah
Chocolate extract is made by infusing an alcohol solution with cocoa beans, the same way vanilla extract is made. It has a real chocolatey flavour. You can get chocolate flavouring, but they tend to have a bit of an artificial taste to them. You can pick the extract up on Amazon and Lakeland
