Our Slow Cooker Sausage Casserole is so easy to make! Just throw all of the ingredients into your slow cooker in the morning and dinner will be ready and waiting for you when you get home.

This hearty casserole is packed full of flavour and is a great way to warm up when the weather starts getting colder. It’s packed full with loads of yummy vegetables, but that doesn’t mean that you can’t serve it alongside even more!

Just right for a cold day. Super filling and easy to make
I changed the recipe to make 3 portions so 1.5 each, I used plant based sausages as I’m having a vegetarian week with p.o.n. It was 632 calories but you felt stuffed. Pinch of nom recipes are so easy t follow

Ingredients

  • 600 grams chicken sausages
  • 2 onions diced
  • 2 peppers any colour - diced
  • 5 medium carrots peeled and sliced into thick chunks
  • 600 grams small potatoes peeled and cut into big chunks
  • 2 400g tins chopped tomatoes
  • 3 tbsp tomato puree
  • 250 ml chicken stock made up with 1 stock cube
  • 2 cloves garlic crushed
  • ½ tsp dried oregano
  • 1 tsp dried thyme
  • 1 handful fresh parsley chopped
  • 1 400g tin butter beans drained
  • 1 beef stock pot
  • 1 tbsp Worcestershire sauce
  • 1 bay leaf

Can this recipe be done in the oven as well or just the slow cooker?

    Hey Chez, you can cook this recipe in the oven in a casserole dish with a tight-fitting lid, or in an oven tray with foil tightly wrapped around the top. Cook for 2–3 hours at 170–180°C (fan 150–160°C/ gas mark 3/4), checking every 30 minutes or so. Hope that helps!

    Hi Faith, if you want to slow cook the vegetable mixture without the sausages, we would estimate it will take around 2 1/2 – 3 hours on high. We haven’t tested this so this is an estimation and we can’t guarantee the result. Hope this helps!

Can I use frozen sausages and just add them into pot frozen or should I defrost first or cook them off a bit first in a frying pan?

    Hi Lynsay, if you’re using frozen sausages, you will need to thoroughly defrost them in the fridge before using them in this recipe. There’s no need to fry them before adding into the recipe; once defrosted, just follow the method as it’s written.     Hi Kelly, this recipe serves 6, so simply divide the finished dish into 6 portions and the calories stated will be correct for one portion. We make our calorie calculations based on serving size and not by weight, as the weight of a portion may vary due to variation of ingredients and water content so isn’t something we can do as an exact measure. I found this was too acidic for my taste, but my partner loved it. I did substitute vegetarian sausages for regular ones and wonder if this may have made a difference.

    Hi Susan, thanks for making our Slow Cooker Casserole but sorry you found it too acidic for your taste. The acidity will have come from the tinned tomatoes. Some cheaper brands can be a bit acidic so we would recommend using good quality tinned tomatoes.You can add a pinch of sweetener or sugar to reduce the acidity if needed.

It says at the stock pot in both steps 1 and 4. When do I add it? I added it all in step 1 and added air fried sausages chopped and butter beans in step 4. But just noticed it said add stock pot in both. Which is correct?
