Chicken is a real staple in our household and we’re always looking for ways to jazz it up… if we can sneak in some hidden vegetables, than even better!

This Mozzarella and Asparagus Stuffed Chicken is slimming friendly, but it definitely doesn’t taste like it.  We love using seasonal veg in our recipes and British asparagus is no exception.  It really adds an extra level of flavour and texture to this dish and to make things better, it’s not that expensive either!

We love our Mozzarella and Asparagus Stuffed Chicken served with lots of veggies, a crisp, colourful salad or even our Homemade Oven Chips.

Ingredients

  • 4 chicken breasts
  • 8 asparagus spears
  • 70 g reduced fat mozzarella
  • 4 slices parma ham

We use a fan assisted oven for all of our recipes. Check out our oven temperature conversion guide.

Instructions

  1. Preheat the oven to 160 degrees. Cut each chicken breast lengthways almost to the edge and open out.
  2. Cut the asparagus spears in half and cut the mozzarella into 4 slices. Place 4 pieces of asparagus and a slice of mozzarella into the opened out chicken breast and fold one half back over.
  3. Wrap the parma ham around the chicken and secure the chicken together with a cocktail stick.
  4. Place on a greased baking tray and bake in the oven for around 25 minutes until golden and cooked through. Serve with your choice of garnish and veg!

    Hi Carolyn, we wouldn’t recommend freezing this recipe. If you have any leftovers keep them in the fridge and follow the reheating instructions in the how to reheat section
