What do I need to make this Nando’s Peri Peri Chicken ?

This Nando’s Peri Peri Chicken is really simple to make – you’ll need a good baking dish like this one from Amazon.

We use something called Xanthan Gum. Xanthan Gum is a thickener and works a bit like cornflour. You add it to a liquid, and it thickens but you only need to add a little! Just 1/4 or a teaspoon works the same as 1 tbsp cornflour, so you will save a few calories.

You can grab Xanthan Gum in the free from aisle of any supermarket (it’s gluten free!), or you can grab it from Amazon.

We use Xanthan Gum quite a lot! Why not use it in this Fish Pie?

  1. Made this yesterday, was lush, had the rest of it tonight with carrot, cauli and peas yum. Will definitely be making it again. 👍😀

  2. I couldn’t find any Xantham Gum but this was delicious nonetheless. I added lot’s of halved cherry tomatoes for some extra moisture and covered in foil for the second half of the cooking. Paprika + Garlic Powder + Onion Powder is an easy combo I’ll be using again. Thank you 🙂
