Our Apple and Custard Overnight Oats taste like a dessert, but they are an amazing slimming friendly breakfast.

These Overnight Oats are not layered in the same way a traditional overnight oats recipe would be. We found that sometimes the oats can stay a bit dry, so we decided to layer in a different way to keep the moist, creamy texture. We also use chia seeds to set the “custard” as they swell up when wet.

Wondering what chia seeds are? They’re super seeds packed full of goodness, and they make you feel fuller for longer. You can get chia seeds from your local supermarket.

Step 1

Mix together the oats, yogurt, grated apple, granulated sweetener, cinnamon and vanilla.

Step 2

Place this mixture in the bottom of a Kilner jar (the jar should be able to hold up to 350ml).

Step 3

In a clean bowl, mix together the “custard” ingredients – fat free natural yoghurt, quark, vanilla extract, chia seeds and granulated sweetener. Beat it well to remove any lumps.

Step 4

Pour this mixture on top of the oat mixture, close the lid and refrigerate overnight.

Refrigerate overnight. The oats need a long time to absorb the flavours and become soft. They will be soft but still have a bit of bite to them after at least 12 hours in the fridge.

Ingredients

For the Oat Layer

  • 32 g porridge oats
  • 100 g fat free natural yoghurt
  • 1 apple grated
  • 1 tsp granulated sweetener
  • 1 pinch cinnamon
  • ¼ tsp vanilla extract

For the Custard Layer

  • 80 g fat free natural yoghurt
  • 50 g quark
  • ¼ tsp vanilla extract
  • ½ tsp chia seeds
  • 1 tsp granulated sweetener

Instructions

    Hi Jenny, we haven’t tested this recipe with dairy-free ingredients so can’t guarantee the results. If you’d like to try making this recipe dairy-free, you could try using a dairy-free natural yogurt and try replacing the quark (there’s no direct dairy-free alternative), with a dairy free cream cheese. There are several brands of dairy-free yoghurts and cheeses available such as Alpro, Violife, Oatly and many supermarkets have their own brands. Let us know how you get on!

Hi Vickie, you can use plain yogurt, with vanilla extract and some sweetener & some custard flavouring. Lakeland do it apparently! Hope this helps x
