If you love a Jaffa, then you have to try these slimming-friendly Raffa Cakes – a great treat if you’re following Weight Watchers or calorie counting!

At Pinch of Nom we are big fans of Jaffa Cakes. When we posted a recipe for the chocolate orange treats, the Great British Bakeoff featured them in their first technical challenge of the series. This sparked a Jaffa Cake frenzy and everyone was talking about them!
Variety being the spice of life, we started thinking about other flavours that might work. Once we settled on the delicious combination of raspberry and white chocolate, Raffa Cakes were born!
You’ll notice that like our Jaffa Cakes, these Raffa Cakes have a drizzle of chocolate on top to keep the calories and Points low. Feel free to add extra chocolate and cover the entire top of each one like the real thing, just remember to measure and account for it if you are watching what you eat – it soon adds up!
Also, no need to worry about the jelly slipping off the top. In our experience the texture of the sponge keeps it in place!

Sukrin Gold doesn’t have that strange after taste that a lot of artificial sweeteners do! It also shares the exact same sweetness and weight to sugar – which makes it really easy to substitute in recipes like these Raffa Cakes.
If you are using a powdered sweetener, then please check how it compares to sugar. In some cases you’ll need to use less, as powdered sweeteners weigh less.
That being said you don’t have to use Sukrin – there are lots of other high quality granulated sweeteners available from the supermarket, such as Canderel Sugarly, and Natvia.
You will also need mini silicon muffin moulds to make these Raffa Cakes.
Silicon bakeware is really handy to have around. You don’t need much to grease them to prevent sticking, plus they squish up for easy storage! You can pick one up for a few pounds and there are plenty of recipes you can use it for. We like this one available on Amazon here.

How many calories are in this Raffa Cakes recipe?
These Raffa Cakes are 33 calories each, while Jaffa Cakes from the shop are 45 calories a piece.
Though that might not sound much of a difference, if you are looking for a snack that is under 100 calories you can have an extra Raffa Cake by using our recipe!
How Weight Watchers friendly is this Raffa Cakes recipe?
Each of these Raffa Cakes is 1 Weigh Watchers Smart Point. The ones you buy from the shop are 2 Points each so it’s a good saving!
How do I make this Raffa Cakes recipe?
Make up the Raspberry Jelly using 1/4 pint of boiling water.
Pour the jelly equally into 12 round silicone moulds, then pop it into the fridge to set.
While you’re waiting for the jelly to set whisk the eggs and sweetener in a clean bowl and whisk until you reach the ‘ribbon stage’. This is when the mixture has thickened so that when you lift the whisk out it leaves a trail on the surface for a second. You will probably need an electric whisk for this step!
Fold the sifted flour and vanilla extract into the egg and sweetener mix.
Spray 12 muffin moulds with some low calorie cooking spray and divide the sponge mix equally between them.
Bake at 180°C for 10 minutes, until the sponges are a light golden colour.
When they are cool carefully remove the sponges from the muffin tin – a tablespoon can help with this step! Place the set jelly on top of the sponges.
Carefully melt the chocolate in the microwave – it doesn’t take long so keep checking every 5-10 seconds! Once melted transfer the chocolate into a disposable piping bag and snip a very small hole in the end.
Drizzle the chocolate evenly over the Raffa Cakes and allow to set.
