I love Disney, actually I should clarify that, I love animation, such a big kid. I remember us going to see Toy Story 3, and I think we were the only adults without kids! There aren’t many films that are about chefs cooking in a kitchen, not good ones anyway – so when Ratatouille came out I enjoyed it a lot! They make the most amazing dish, in the most extraordinary way.

Someone was talking about the film on Facebook the other day, and it reminded me about this dish. So I thought we’d make it! It’s basically layered vegetables on top of a tomato sauce.

The Right Tool For The Job

There is one specific tool you need for this dish – a Mandolin. Maybe you’ve got some decent knife skills. Maybe you’re a bit of a pro at slicing and dicing. But, when it comes to making paper-thin veggie slices like a real Kitchen ninja (without slicing your finger off!), there’s only one tool in town, and that’s the mandolin.

When used properly, it’s very safe. But use it without paying attention – it will hurt. A lot. I recommend one of the cheapest ones out there, the Grunwerg Benriner Mandolin. At only £20, it’s safe, sharp, stable & comes with a guard. You can buy it via Amazon & get replacement blades for it.

What’s In It?

This is packed full of wonderful, colourful veggies!

Ingredients wise you need a few things. To slice you need; Aubergine, Courgettes, Marrow and some peppers. For the Marinara sauce you need a tin of Tomatoes (we recommend Cirio, they make the best sauce), some Tomato Puree, an onion, a carrot a stick of celery, 2 garlic cloves, a stock cube, a tbsp of Balsamic and some Italian herbs.

If you don’t have time to make the Marinara sauce you could just use Passata with a good helping of herbs, garlic, salt and pepper.

To save time make the Marinara sauce first and chop the veg whilst it’s cooking.

Serving Up

This is one of those dishes that looks the bees knees but is difficult to serve and keep it looking so nice. So, I recommend you put the oven dish on the table & let other people serve themselves!

You can serve what you like with it – we have this with some chicken or sausage and cous cous – beautiful!

INGREDIENTS

INSTRUCTIONS
Marinara Sauce
  1. Spray a frying pan with low calorie cooking spray & heat till hot. Throw in the onions and cook until soft. Add in the garlic & herbs and cook for a couple of minutes till the herbs become aromatic
  2. Add in the carrot & celery, and cook for a further 5 minutes. Make sure to keep stirring
  3. Add in the stock cube, Balsamic Vinegar and tin of tomatoes, then fill half of the tin with water and add that also. When the pan starts to bubble turn the heat down to medium and cook for 15/20 minutes - a good time to start slicing your vegetables!
  4. Once cooked, attack with a stick blender/put into a food processor & whizz up until smooth. Pour into a large oven proof dish
Sliced Vegetables
  1. Preheat the oven to 190°C. Slice the vegetables on the mandolin and place onto separate plates. You want to layer them in the dish on top of the tomato sauce in a repeating pattern. Work around the edge then do the middle
  2. Once finished sprinkle a liberal amount of salt & freshly ground black pepper on top. A few sprays of frylight & top with a piece of baking parchment/greaseproof paper. This is just to stop the water thin slices from catching in the the hot oven
  3. Cook for 45 minutes at 190°C - it's cooked when the tomato sauce bubbles up around the vegetables. Serve immediately and enjoy!
