We love chicken, we love BBQ sauce and we love cheese (who doesn’t?!), so a perfect meal for us is this Slimming World Syn Free Slow Cooked Hunters Chicken.

There’s a lot of Hunters Chicken Slimming World recipes out there, but we thought we’d use our own BBQ sauce recipe to make our Slimming World Syn Free Hunters Chicken. and cook it in the Instant Pot, our extra special slow cooker.

Ideal if you want to throw the Slimming World Syn Free Hunters Chicken recipe together in the morning (or the night before) and have it ready for dinner.

If you haven’t tried cooking chicken in the slow cooker you really should, you won’t believe how moist and tender it is!

This Slimming World Syn Free Hunters Chicken calls for BBQ seasoning, we like to use Schwartz Perfect Shake BBQ Classic Seasoning as it’s syn free.

However, if you don’t have this you can use any BBQ seasoning just remember to check the syn value. You’d be amazed at how many syns are in some seasonings and rubs due to the high sugar content!

You can find the Schwartz Seasoning here on Amazon or in most supermarkets.

We use Sukrin 1 which is an all-natural granulated stevia sweetener alternative to sugar with zero calories. You can grab Sukrin 1 over onAmazon UK.

Sukrin 1 doesn’t have that strange after taste that a lot of artificial sweeteners do!

It also shares the exact same sweetness and weight to sugar – which makes it really easy to substitute in recipes like this Slimming World Syn Free Hunters Chicken.

If you are using a powdered sweetener, then please check how it compares to sugar. In some cases you’ll need to use less, as powdered sweeteners weigh less.

That being said you don’t have to use Sukrin – there are lots of other high quality granulated sweeteners available from the supermarket, such as Canderel Sugarly, and Natvia.

Whenever we need to replace oil in cooking we use Frylight. Perfect for everyday frying and cooking, it delivers exactly one calorie per spray, which makes it Syn free! The Rapeseed or Olive Oil flavours are ideal for this Syn Free Slow Cooked Hunters Chicken recipe.

First Make the BBQ Sauce
  1. Spray a frying pan with frylight and cook the onions and garlic until the onions are soft
  2. Add the tomato puree & tinned tomatoes and cook for 5 minutes on high, stirring frequently
  3. Add in the rest of the ingredients, lower the heat and simmer for 20 minutes, the sauce should thicken nicely
  4. You can make this in advance, just put it in an airtight container and store in the fridge until ready to use
To Make the Hunters Chicken
  1. Wrap each chicken breast in a bacon medallion and secure it underneath with a cocktail stick
  2. Place the wrapped chicken in the slow cooker
  3. Pour the BBQ sauce over the chicken, stir gently to make sure it is coated
  4. Turn on the slow cooker and cook for 3 hours on High/Medium OR 6 hours on Low
  5. When the chicken is cooked, remove them from the slow cooker and place them in an oven proof dish.
  6. Check the consistency of the sauce. If it needs thickening slightly turn up the heat on the slow cooker and allow it to simmer, with the lid off for a couple of minutes
  7. Pour the sauce over the chicken and sprinkle each one with 20g of grated cheese, then place under a pre heated grill until the cheese starts to brown
  8. Serve with anything you want, salad, rice, baked potatoes and veg

This recipe can be frozen, but please remember to do the following;

- Freeze it as soon as it is cold enough.
- Use a container or bag that is suitable for freezing.
- Defrost thoroughly before reheating (you can use the defrost setting on your microwave.)
- Make sure it is piping hot all the way through before serving.

If making this recipe Gluten Free please make sure to check the ingredients that you’re using

- Worcestershire sauce - substitute with Henderson’s Relish.

  1. This looks fab and I can’t wait to try more SW friendly slow cooker recipes especially towards and across Winter. However, could I ask / suggest more info re Sukrin is given in terms of the right flavour to buy. I’ve checked Amazon (UK / version) and it doesn’t have ‘Sukrin 1’ it appears to go in flavour (I.e. Peanut, almond or coconut) alternatively a ‘gold’ and special baking versions. I really want to make sure I get the recipe and therefore flavour right! Thank you! 🙂

      We’ve never put it in the freezer (it never lasts long enough to!) but I can’t see any reason why it wouldn’t freeze

  2. Fab recipe, the only thing i have changed is to cook the chicken and bacon separately (so you can get crispy bacon). Then stack onto the oven cooked chicken, then the sauce with your cheese allocation on top then back in the oven to melt.

    To be honest i cant tell the difference from a pre-made dish apart from being much better and more washing up!

  3. Hi, if im freezing this do i cook it all then freeze or freeze uncooked chicken in the sauce? Im thinking cook the chicken in the sauce then freeze before adding the cheese?
