Instead of tin tomatoes I roasted fresh greenhouse tomatoes took skin’s off and continued with the recipe, delicious

I found that the water I added evaporated quickly with the lid on for the amount of time it needed to cook and ended up adding more water at the end to make it a bit thinner. Still packed full of flavour!

Step 1

Add 4 sprays of low calorie cooking spray to the pan. Add the roughly chopped onion and cook until soft.

Add remaining veg (roughly chopped) stock cubes and chopped tomatoes. Add enough water to just cover the ingredients.

Bring to the boil, cover and simmer for 15-20 mins until the veg is tender.

Step 4

Blend until smooth, using a stick blender or food processor and add seasoning if necessary and serve!

How do you know when Speedy Tomato Soup is cooked?

The soup should be brought to the boil and then covered and left to simmer for 15-20 minutes until the veg is tender. It then needs to be blended until it is smooth.

Standard advice here in the UK is to cook food until it has reached 70°C and stayed at that temperature for 2 minutes. This is to keep your family safe.

How long can you keep Speedy Tomato Soup in the fridge?

Once you’ve put it out, ideally you should eat it within 4 hours.

If you allow any leftovers to cool, make sure to refrigerate in a container with a lid and chill. You can keep leftovers of Speedy Tomato Soup in the fridge for approximately 3 days or so.

  • 2 large carrots
  • 1 stick celery
  • 2 large potatoes
  • ½ onion
  • 1 tin chopped tomatoes
  • 2 vegetable stock cubes

    Hey Emily, We work out our recipes on the serving size not by weight. To work out your own weight of a serving you would need to make the finished dish and divide servings, as the weight will vary due to variation of ingredients and water content it’s not something we can do as an exact measure. If you scroll down to the recipe card at the bottom of the page on the website there is a little arrow by servings and you can alter up or down to serve more or less people. Hope that helps!

    Hi Sue, tinned tomatoes usually have a more intense flavour than fresh tomatoes so they work well in soup. We haven’t tried making this soup with fresh tomatoes, but if you’d like to try it, we would suggest a 400g tin is equivalent to about 5 or 6 medium tomatoes. These will weigh over 400g but you will need to skin and deseed them first. You could try adding a little tomato puree to make the tomato flavour more intense. Hope this helps!

    Hi Ann , yes, you could use passata instead if you prefer. The tin of tomatoes in this recipe would be 400g. Passata often comes in a 500g carton, so you could add that and it should be fine. Let us know how you get on. Thanks for getting in touch.

I made this and used sweet potato instead and added a pinch if chilli flakes, it gave it a nice sweetness with a hint of heat. Even my husband was impressed.
