Before we get to the recipe here’s a bit about Becky and her journey so far……

Me at my largest in 2007 and 3 stone lighter in 2016!! Still working on being a smaller me. I lost 3 stone on my own before I joined.

In August 2013 I started attending a slimming club and left after I had lost 2 stone 6lbs. I thought I knew what I was doing and decided to go on my own again!

I managed to maintain until January 2016 when I started a new job. Less walking more driving helping pile on the pounds! In September I rejoined a slimming group. I haven’t had the same losses as last time but my Doctor says I may need to change medication and this will help. Hoping to get back to the 5 stone lighter again!

INGREDIENTS

INSTRUCTIONS
For the Spiced Turkey Bites
  1. Preheat the oven to 180 degrees. In a bowl, mix the spices with some salt and pepper. Add the meat and mix together well. Chill in the fridge for an hour to marinade.
  2. Roll the mixture into 24 balls. Place onto a baking sheet, spray with low calorie cooking spray and cook in the oven for 10 minutes until golden.
  3. Pop a cocktail stick into each bite and serve on lettuce "cups" with Minty Dip.
For the Minty Dip
  1. Mix together the yoghurt and mint jelly and serve in a dip bowl.

- Stock cubes
- Soy sauce - substitute with Tamari.
- Worcestershire sauce - substitute with Henderson’s Relish.
