This Instant Pot Beef Stew makes use of a great piece of equipment for your kitchen – the Instant Pot – which ensures that the beef in this recipe comes out really tender and delicious. It cooks everything perfectly (even the veg) in just 35-40 minutes, giving you more time to sit back and relax on those chilly winter nights.

This recipe is perfect for making in batches and freezing for a quick-fix when you’re in need of something filling and warming.

If you are feeling a little indulgent, why not pour a small glass of red wine into the stew or add a red wine stock pot? It really enhances the flavour and makes it super special!

If you don’t have an Instant Pot, then you can also cook this Instant Pot Beef Stew in the oven or in a slow cooker too!

Step 1

Turn your Instant Pot onto ‘Saute’, spray some low calorie cooking spray into it and add the beef.

Saute until the meat is no longer pink, then toss in all the veg. Don’t worry if the steak browns on the bottom, just keep stirring.

Add in the beef stock, spices and seasoning.

When it starts to bubble press cancel and place the lid on your Instant Pot. Set the valve to sealing. Cook on pressure cook for 35 minutes.

Step 5

Once cooking is complete, your Instant Pot should automatically switch over to warm. Leave the steam valve on natural release for 20 minutes.

Step 6

Open the lid and if the stew isn’t thick enough then you can add some instant mash. We don’t find it needs thickening, but it is an option!

Step 7

Add more salt if needed and keep warm until you’re ready to serve.

How do you know when this Instant Pot Beef Stew is cooked?

Once cooking is complete, your Instant Pot should automatically switch over to warm. Leave the steam valve on natural release for 20 minutes.

Standard advice here in the UK is to cook food until it has reached 70°C and stayed at that temperature for 2 minutes. This is to keep your family safe.

How long can you keep this Instant Pot Beef Stew in the fridge?

Once you’ve put it out, ideally you should eat it while it’s still hot.

If you allow any leftovers to cool, make sure to refrigerate in a container with a lid and chill. You can keep leftovers of Beef Stew in the fridge for approximately 3 days or so.

Yes you can! This recipe can be frozen, but please remember to do the following;

  • Freeze it as soon as it is cold enough.

From chilled: Place in a microwave proof container with loosely fitting lid and heat for 4-7 minutes until piping hot.

From frozen: Defrost thoroughly, then as above. Make sure it is piping hot all the way through before serving.

Ingredients

  • 1 kg stewing steak all fat removed and diced
  • 1 large onion chopped
  • 1 large courgette chopped
  • 4 large potatoes chopped into chunks
  • 4 large carrots chopped
  • 500 ml beef stock made with 500ml or 2 cups water and two beef stock cubes
  • low calorie cooking spray
  • 1 tsp salt
  • 1 bay leaf
  • 1 tsp freshly ground black pepper
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tbsp Worcestershire sauce
  • 1 small swede chopped
  • 1 large leek chopped
  • 1 stick celery chopped

Instructions

Thsi stew was probably the best I’ve ever tasted. I did it in the slow cooker and although there are only 3 in my house, there’s enough for another 3 servings. I particularly loved that I put speed in and it only added more taste. I used a low sugar tin of baked beans instead of butter beans. And Candarell granulated sugar for the balsamic paste. However, I will make this stew a regular in my house. It’s ideal for slow cooking and kids will love it with the tomatoey taste.

I tried this today in my slow cooker and it is delicious … did need a little thickening but only because in a slow cooker you use more liquid I suppose. Also I added sliced mushrooms for the last hour of cooking … yummy. Thank you for sharing your recipe x
