What do I need to cook these Chicken Tikka Kebabs?

There are a few things you need to make this Chicken Tikka Kebabs. Some are necessary and some are ideal – they’ll make your life easier for sure!

You’ll need;

  • Good quality chicken breasts
  • A jar with a tight lid
  • Bamboo skewers
  • A cast iron griddle pan

As for the jar with the light lid – it’s needed to store the rest of the Tikka Seasoning Mix in. I use these Kilner herb jars from Amazon, they’re really good quality, and will keep your mix fresh and dry.

The bamboo skewers you can probably pick up from any supermarket, they’re on offer in a few supermarkets at the moment!

Lastly the cast iron griddle pan, this has to be the most used pan in our kitchen. It conducts heat so well, and is suitable for all stove surfaces. You also get those lovely griddle marks on your meat too.

How do I make and cook these Chicken Tikka Kebabs?

This is one of our easier recipes! Literally all you do is cut the chicken up, marinade and cook. It doesn’t get much easier.

Step 1

Make the Tikka Seasoning Mix by mixing together all of the ingredients in the recipe below. Store them in a jar with a tight lid as you won’t use all of it, so best to keep some for later.

Step 2

Chop the chicken into chicken nugget sized pieces, and pop in a bowl along with the lemon juice. Add 2 tbsp of the Tikka Seasoning Mix (in the recipe below) and mix well, then add the yoghurt and repeat. You want to make sure all of the chicken pieces are coated.

Cover the bowl with clingfilm and leave the chicken to marinade in the fridge for at least an hour, but no more than 6 hours.

Step 3

Preheat your oven to 200°C, pop your pan on the stove to heat up and thread the chicken onto the skewers.

Step 4

We want to give the Chicken Tikka Kebabs some colour first, so pop them in the griddle pan/frying pan to brown. Then place in the preheated oven for 5-10 minutes until cooked through.

INGREDIENTS

INSTRUCTIONS
Tikka seasoning Mix
  1. Mix all of the ingredients together & place in a glass jar. Preferably one with a tight lid
Syn Free Chicken Tikka
  1. Cut the chicken breasts into chunks about the size and thickness of a chicken nugget. Place into a non-reactive bowl
  2. Add the lemon juice and mix well so all of the pieces are coated
  3. Add 2 tbsp of the Tikka Seasoning Mix and mix well. Then add the yogurt (and food colouring if you're using it) and mix well. Cover with clingfilm and place in the fridge for at least 1 hour
  4. Preheat an oven to 200°C
  5. Thread the chicken onto the bamboo skewers. Spray the chicken skewers with low calorie cooking spray
  6. Heat a cast iron griddle pan (or mist a frying pan with Frylight & heat, if you don't have one). When the pan is very hot, add the chicken, and cook on each side until the chicken colours
  7. Once coloured on all sides, place the chicken in the oven for 5-10 minutes until the chicken is cooked through

This recipe can be frozen, but please remember to do the following;

- Freeze it as soon as it is cold enough.
- Use a container or bag that is suitable for freezing.
- Defrost thoroughly before reheating (you can use the defrost setting on your microwave.)
- Make sure it is piping hot all the way through before serving.

If making this recipe Gluten Free please make sure to check the ingredients that you’re using

Especially things such as; 

- Stock cubes
- Soy sauce - substitute with Tamari.
- Worcestershire sauce - substitute with Henderson’s Relish.
- Etc.

  2. Made this tonight with a ‘kebab shop style salad’ (spiralised red and white cabbage, spiralised onion, shredded iceberg
    lettuce and chunky tomato – lemon, white vinegar and salt for the dressing), the chicken was AMAZING! My boyfriend loved it too, would never have thought it was a SW recipe! Felt like a takeaway! Thank you so much 🙂

      The acidity of the lemon juice in the marinade actually starts to ‘cook’ the chicken, so it will make it tough and not very pleasant to eat. Hope that helps.

  5. Oh no I’ve just marinaded my chicken and popped them into the fridge to have tomorrow evening at a bbq. 😢 i just read the part where it says no longer than 6 hours. Will they be ok? Or will I bin them?

    1. Hi Kelly
      We suggest no longer than 6 hrs as the acid in the lemon juice will start to ‘cook’ the chicken, so it may be a little tough. As long as they’ve been in the fridge, they’ll still be edible though.
