This slimming-friendly Chilli and Lime Baked Salmon is so quick and easy to make, and it’s a great mid-week meal if you’re calorie counting or following a plan like Weight Watchers. The zesty flavours make this fish dish feel really fresh and summery – perfect to serve with a scoop of Pineapple Salsa to make things extra zingy!

Chilli and lime is a great combination to have with salmon, but if you’re not a fan you can use chicken instead, it’s just as good! Don’t forget to adjust the cooking time if you’re using chicken. It will probably take an extra 5 – 10 minutes depending on the size, so you may need to remove the peppers and onion so they don’t over cook.

Preheat the oven to 190°C.

Mix together the juice of 2 of the limes, garlic, chilli, cumin, parsley, water and sweetener and set aside.

Place the salmon fillets on the baking tray, and drizzle with some of the marinade.

Toss the diced peppers and onion in the remaining marinade, then arrange them around the salmon fillets. Wedge the remaining lime and add half to the tray.

Season with some salt and pepper, then bake in the oven for 15 minutes. If you prefer the peppers a little more well done, remove the salmon from the tray and return the peppers and onion to the oven for a few more minutes.

Step 7

Sprinkle with a little more chopped parsley and serve with some fresh lime wedges and fresh seasonal vegetables.

  • 2 salmon fillets
  • 1 red pepper deseeded and diced
  • 1 green pepper deseeded and diced
  • 1 red onion diced
  • 3 limes
  • 2 tbsp fresh parsley chopped

Hi when I make the Nandos spicy rice my rice still seems a bit undercooked when the liquid is gone. Is there something I can do to make it a bit softer.

    Hi Amanda, Once you have brought the pan to the boil make sure you cover with a lid and turn to a low simmer to let it slowly cook. If it’s still a little hard add a little more water and continue to cook on low with the lid. Hope that helps!
