Syn Free Chinese Style Pepsi Max Chicken | Slimming World

Pre-Slimming World, if somebody had suggested that I pour half my drink into my dinner I would have thought they were completely mental. Until I tried this Syn Free Chinese Style Pepsi Max Chicken.

Now, I spend half of my life trying to get people to put fizzy pop in their food.

The orginal recipe from Slimming World circles suggests using a can of Diet Coke in this dish. However, after being caught short with only a can Pepsi Max in the fridge, I discovered that not only does it taste better, it thickens better too.

One of the most common complaints I see on Instagram is that Diet Coke Chicken turns out too runny and refuses to thicken.

I have never had this experience with my Syn Free Chinese Style Pepsi Max Chicken. Hopefully you guys wont either!

However, this might be down to the fact that I don’t add the 200ml of chicken stock required in the original Slimming World Recipe. I still add a chicken stock cube, but let it dissolve in the Pepsi Max once in the pan.

INGREDIENTS

INSTRUCTIONS
  1. Dice the chicken into chunks and slice the vegetables into whatever shape or form you want.
  2. Heat a non stick frying pan, add Fry Light and toss in your chicken. Stir Fry for 2-3 minutes.
  3. Add the onions, garlic and ginger. Fry until the onions have softened.
  4. Add your chosen vegetables and stir fry until slightly softened.
  5. Add the passata, tomato puree, chicken stock cube, soy sauce, Worcestershire Sauce and 3/4 of the Pepsi Max.
  6. Keep stirring and keep the pan at a low simmer. It should start to thicken after about 10 minutes. If you think it needs to be a bit looser, add more Pepsi Max.
  7. After about 20-30 minutes, you will have a lovely sticky sauce and beautifully tender chicken and veg.
  8. Serve with boiled rice and some spring onions to garnish (if you're feeling posh).
  9. Add vodka to the remaining Pepsi Max, syn it, neck it. You deserve it!

  1. Try putting 1 teaspoon of Chinese five spice
    It’s gorgeous.
    I use exactly your recipe above plus the five spice…expect for the purée and fresh ginger.

    I serve it with crispy noodles.
    Soak your normal dried noodle until soft and drain well.

    Spray a large frying pan with fry light and heat …when very hot put in noodles spreading them out thinly. Cook until the almost start to become crispy watch they don’t burn…
    Spray the top of the noodles with fry light and turn over using two spatulas and repeat.

    Serve Chinese Pepsi max chicken on top and sprinkle with chopped up spring onions.

      We’ve not tried it with cherry coke, but we know some people have made it with Fanta, so it would be worth giving it a go
