With the limited amount of ingredients required, this is a classic example of a store cupboard pudding – and a good one at that!

This is a cheap and easy recipe, a classic dessert that the whole family can enjoy. Preparing only takes 5 minutes and then you can sit back and relax as it cooks for 45 minutes. At just 132 calories, you can rest assured that this is a treat that still follows a Weight Watchers diet.

We use Sukrin 1 which is an all-natural granulated stevia sweetener alternative to sugar with zero calories. You can grab Sukrin 1 over on Amazon UK. Sukrin 1 doesn’t have that strange after taste that a lot of artificial sweeteners do! It also shares the exact same sweetness and weight to sugar – which makes it really easy to substitute in recipes like this Egg Custard.

That being said you don’t have to use Sukrin – there are lots of other high quality granulated sweeteners available from the supermarket, such as Canderel Sugarly, and Natvia.

How many Calories are in this Egg Custard?

There are 132 Calories per portion in this Egg Custard, which means it falls into our Everyday Light category.

This Egg Custard is perfect if you’re following a calorie controlled diet, and fits well with any one of the major diet plans such as Weight Watchers.

As a guide, an average man needs around 2,500kcal (10,500kJ) a day to maintain a healthy body weight. For an average woman, that figure is around 2,000kcal (8,400kJ) a day. Step 1

In a large bowl, mix together the eggs, yoghurt, sweetener and vanilla until it resembles custard.

Step 2

Prepare two ramekins by placing them in a bain marie (baking dish, filled with enough hot water to come up to the middle of the ramekins) and pouring the mixture equally between the two.

Step 3

Cook at 180°C for 45 minutes until golden. They will puff up when cooked and will sink quickly when they’re out of the oven, but this is normal!

How do you know when this Egg Custard is cooked?

The mixture should be cooked at 180°C for 45 minutes until golden, and will puff up when cooked (and will sink quickly when they’re out of the oven – but this is normal!)

Standard advice here in the UK is to cook food until it has reached 70°C and stayed at that temperature for 2 minutes. This is to keep your family safe.

How long can you keep this Egg Custard in the fridge?

Once you’ve put it out, ideally you should eat it within 4 hours.

If you allow any leftovers to cool, make sure to refrigerate in a container with a lid and chill. You can keep leftovers of Egg Custard in the fridge for approximately 3 days or so.

Can I freeze this Egg Custard?

We don’t recommend freezing this recipe.

How do I reheat this Egg Custard?

Reheat in a microwave for around 1 minute until piping hot.

  • 175g fat free vanilla yoghurt
  • 4 tbsp granulated sweetener
  • 1 vanilla pod (cut in half, scraped out with a knife)

Are you sure the quantity of Sukrin 1 is correct? I have just made these with the suggested 4 table spoons and they were inedibley sweet Made them again with just one teaspoon and they were delicious! Will certainly be making them again but with just the one teaspoon of sweetener. Thank you for the idea and for all your other fab recipes.
