This Mexican-Style Slaw joins the other slaws that we’ve made, like our Asian Slaw and Coleslaw.

It’s a perfect slimming and weight watchers friendly side dish to enjoy no matter what weight loss plan you’re following – you don’t need to count any Weight Watchers points and it only contains 85 calories per portion! Not only that, but it’s suitable for most diets, including dairy free, gluten free, vegetarian and vegan.

You can pair this Mexican-Style Slaw with anything from the BBQ – we’d recommend our delicious Grilled / BBQ Courgettes recipe – it’s also great alongside a salad. Spice up the recipe by adding some cayenne pepper!

Ingredients

For the slaw

  • 2 broccoli stems
  • 2 large carrots
  • ½ red cabbage
  • ½ white onion
  • 3 spring onions

For the dressing

  • 4 tbsp lime juice (juice of 2 limes)
  • 1 tsp ground cumin
  • 1 tsp granulated sweetener
  • ½ tsp paprika
  • ½ tsp ground coriander
  • ½ tsp salt
  • ¼ tsp pepper
  • ½ chilli pepper
  • 1 lime cut into wedges

Instructions

  1. Mix all the dressing ingredients together in a large bowl and mix well. Make sure the sweetener dissolves.
  2. Use a mandolin to finely slice all the slaw ingredients and place into the bowl with the dressing in.
  3. Let the slaw sit for 5-10 minutes in the fridge.
  4. Top with slices of lime and serve!

    Hey Delta, you can keep this Mexican Slaw in a container in the fridge for 3 days or so. Hope that helps!
