Our baked oats have been pretty popular to say the least.

Not only can they be placed into a dish and baked, but with the help of some very cool moulds and tins we can make them into doughnuts!

They aren’t doughnuts in the traditional sense… they’re not fried, use your HEB of oats, but the texture and taste is pretty damn nice. So nice that I’ve just scoffed all 15 of them whilst I watched Strictly!

The tin we used is nonstick, but to be safe we gave it a misting with some Frylight. It will lubricate them to the point that they’ll just tip out without them sticking.

You can buy coffee extract in most supermarkets, but also online at Amazon!


Making the puree is pretty damn easy & is SO versatile, you can use it in all of the recipes in the grid below.

Just chop, microwave, add your spices and puree. It couldn’t get any easier!

It also adds speed food to something that would usually be laden with so many syns. How good is that!?

Is it a tweak?

Here’s the good news, using your oats this way (blitzed in a food processor/blender) is not a tweak! We even checked with Slimming World head office just to be super sure.

What is Sukrin?

Sukrin make a range of all natural sugar alternative. Sukrin Gold is a brown sugar alternative, Sukrin 1 is a granulated sugar alternative and Sukrin Icing is an icing sugar alternative.

They are all syn free, have no horrible artificial sweetener after taste and you can use them in exactly the same way you would use their regular counterparts. You can grab Sukrin Gold and Sukrin 1 Sweetener over on Amazon.

If you are using a powdered sweetener, then please check how it compares to sugar. In some cases you’ll need to use less, as powdered sweeteners weigh less.

That being said you don’t have to use Sukrin – there are lots of other high quality granulated sweeteners available from the supermarket, such as Canderel Sugarly, and Natvia.

Synning the sweetener

As you will probably know Slimming World have brought out some new recommendations regarding the syn value of granulated sweeteners. Slimming World have confirmed what this change means.

This recipe has been amended to take into consideration the recent changes.

Where there is 1 tbsp or more being used per serving they recommend members count 0.5 Syn per tbsp. If using smaller amounts, like a pinch or teaspoon, there’s no need to worry about Syns at all.

The recipe for these Syn Free Pumpkin Spiced Latte Mini Doughnuts now uses 3/4 of a tablespoon of sweetener. This means there’s no need to add any syns on for the sweetener itself. However, if you want to add some more sweetener then you should add 0.5 syns for each tablespoon.

For the Mini Donuts
  1. Pre heat the oven to 180°C
  2. Spray the mini donut moulds with some Frylight
  3. Mix the oats, spiced pumpkin puree, granulated sweetener, egg, coffee extract and yoghurt together well
  4. Pour the mix into the moulds. You should get 15 out of the mix, so you're tin has 12 holes then you will have to bake the rest when the first batch are cooked
  5. Bake for 12 - 15 minutes, then turn them out onto a baking tray and bake for another 4 or 5 minutes
  6. While they are cooking mix the granulated sweetener and Cinnamon in a decent sized bowl
  7. Remove the mini donuts from the oven, spray them with some Frylight then toss them in the bowl of cinnamon 'sugar' making sure they are well coated
  8. Enjoy!
For the Spiced Pumpkin Puree
  1. Place the diced Pumpkin or Squash in a microwavable dish, cover and microwave on high for 3 minutes 30 seconds
  2. Place the cooked pumpkin, cinnamon, mixed spice and coffee in a food processor and blitz until smooth. You can do this in advance and leave it in the fridge until you're ready to use it

This recipe can be frozen, but please remember to do the following;

- Freeze it as soon as it is cold enough.
- Use a container or bag that is suitable for freezing.
- Defrost thoroughly before reheating (you can use the defrost setting on your microwave.)

  1. I made these and they were amazing. (used toffee muller light as I couldn’t find the coffee ones).

    Is the batter freezable? I loved them best warm from the oven but they take a while to make. Thanks

  2. Will be having a go at these, one thing that’s not clear is how much sweetener to put in the batter mix and how much to keep back for the cinnamon sugar if only supposed to use 3/4 tbsp in total? Any advice gratefully received

      The recipe lists 3/4 tbsp of sweetener for the batter mix and suggests an exta dusting to go with the half tsp of cinnamon for coating. This would be a pinch of extra sweetener, at most half a tsp.

      Butternut squash and pumpkin belong to the same vegetable family, so it should be okay. You can adjust the spices etc to give more flavour. 🙂

  3. If someone had there early HEB allowance then how many syns are these donuts please. I have made them without the pumpkin and Instead of Caffè latte muller light I used toffee flavour.

  4. Is it correct to not add any baking powder? I found (I have a 6 hole metal donut tin) they didn’t rise at all, and were incredibly soggy. I had trouble turning them out to do the extra baking because they were so soft! The outside was cooked but the inside was like oaty omelette! What did I do wrong? I used canned pumpkin because I happened to have some already open.

      As we mention in the recipe blurb, this is an alternative way to serve baked oats. They aren’t like doughnuts in the traditional sense, because they’re not fried. Baked oats tend to be fairly dense in texture. 🙂
