This gorgeous green and vibrant Rocket and Basil Pesto is really tasty – even if we do say so ourselves! It livens up a multitude of foods with its fresh and savoury flavour; meat, fish, vegetables, pasta…you name it, there’s not much that can’t be improved by a dollop of Rocket and Basil Pesto!

Thanks for this recipe. I was wondering how I could make this in bulk for busy days. Would it work if I blitz all ingredients except for quark and keep in fridge then mix the quantity I require with quark just before using?

Hi, mine turned out runny and smooth – I suspect due to what I used to blitz it! Though I don’t mind as it tastes lovely! Makes a perfect sauce for pasta. I also used fresh garlic as I couldn’t find the lazy type and it worked fine. But the upshot of the runny consistency is that there is way more than 2 portions – at least for me. I had some on a handful of pasta for lunch and only needed 2 desert spoons! Very yummy
