This Smoked Salmon Mousse recipe is ideal for something to nibble on when you’re sitting in the garden with a drink in hand – you could probably even have it on a sandwich, on a cracker, on some toast for breakfast or even stirred through some pasta for a quick and easy evening meal! Step 1

Place onion and parsley into your food processor and pulse a couple of seconds until roughly chopped. scrape down the side of the bowl with a spatula.

Step 2

Add in quark, cream cheese, lemon juice and Tobasco and whizz up on medium for 20 seconds. Scrape down the side of the bowl with a spatula.

Step 3

Add the gherkin and smoked salmon and whizz on medium for 30 seconds until a smooth mousse-like consistency is achieved. For a coarser texture, pulse 3-4 times, until desired consistency.

Step 4

Use immediately, or for best results chill in the fridge for 30 minutes. Garnish with chopped chives or spring onion before serving.

  • 100 g smoked salmon trimmings
  • ¼ small red onion
  • 1 sprigs fresh parsley
  • 125 g quark
  • 55 g lightest cream cheese
  • 1 or 2 pickled gherkins
  • ¼ tsp Tabasco sauce
  • 1 lemon Juice of
  • fresh chives to garnish with
