Not only is it possible, but it’s actually really nice. I was a little bit hesitant, being a lover of cream and especially creamy pasta sauces – I thought nothing could even come close to the smooth, savoury goodness of a creamy Carbonara sauce.

I really struggled to find a way of making a creamy sauce for pasta without the use of Smash! Coating carbs, with carbs just seems to wrong, right?!

Food Processor/Blender

You need a food processor or blender for this Syn Free Speedy Carbonara – I don’t think a stick blender will cut it. You need to be able to puree the cauliflower so it’s nice and smooth.

When it comes to small kitchen electricals we often find that buying the cheapest isn’t always the best. You can pretty much guarantee that it’ll break.

So do yourself a favour and pick yourself a decent blender. Let it do all of the hard work for you!

There are plenty of blenders/food processors choose from over on Amazon UK.

This Kenwood Compact Food Processor does the job really well and doesn’t take up too much space in your kitchen cupboard.

If you want a cheesy flavour, just add in some grated cheese or some Primula, Philadelphia, or low fat spreadable cheese – you could use some of your HexA allowance!

INGREDIENTS

INSTRUCTIONS
Sauce
  1. Fry onion and garlic with bit of frylight for 5 mins
  2. Place the onion and garlic in food processor, add the cauliflower and pulse for 5-10 seconds
  3. Tip into a pan, add the 2 Knorr stock cubes and 300ml of water C.ok for 20 mins, med-high heat, stirring frequently
  4. Once cooked tip everything back into the food processor/blender and blend on high for 1 minute
  5. Return to pan, season and mix in cooked pasta
Pasta
  1. Place water into a pain along with the salt, bring to the boil
  2. At rolling boil place pasta into the pan & boil for as long as the packet says
Bacon & mushroom top
  1. Heat a large frying pan with 7 squirts of frylight
  2. Place Bacon, mushrooms and onion in the pan. Cook for approx 10 mins till onions are nice and brown
  3. Place onto pasta/sauce mix & finish with freshly ground black pepper
