Mist a wok with some low calorie cooking spray, then sauté the onion, garlic and ginger until they start to soften.

Step 4

Add the chicken and cook until browned.

Step 5

Add the soy sauce, oyster sauce, rice vinegar, sweetener, black pepper and 5 spice.

Step 6

Stir, then add the peppers and spring onion. Cook for a few minutes.

Step 7

Add the spiralized courgettes and carrots. Stir and leave to cook for another few minutes.

Step 8

Stir in the drained noodles and beansprouts, and serve.

Ingredients

  • 2 chicken breasts cut into chunks
  • 1 clove garlic chopped finely
  • 2 cm ginger chopped finely
  • 1 onion sliced
  • 1/2 red pepper sliced
  • 1/2 green pepper sliced
  • 2 large carrots spiralized using the linguine cone
  • 1 handful beansprouts
  • 2 courgettes spiralized using the linguine cone
  • 5 spring onions chopped
  • 3 tbsp soy sauce
  • 2 tbsp oyster sauce
  • 2 tbsp rice vinegar
  • 1 tbsp granulated sweetener
  • 1/4 tsp ground black pepper
  • 1/4 tsp Chinese 5 spice
  • 1 nest dried egg noodles
  • low calorie cooking spray
