How many calories are in this Sweet and Sour Chicken recipe?

There are 315 calories per portion in this Sweet and Sour Chicken, which means it falls into our Everyday Light category.

This Sweet and Sour Chicken is perfect if you’re following a calorie controlled diet, and fits well with any one of the major diet plans such as Weight Watchers.

As a guide, an average man needs around 2,500kcal (10,500kJ) a day to maintain a healthy body weight. For an average woman, that figure is around 2,000kcal (8,400kJ) a day. Step 1

Mist a decent sized wok with low calorie cooking spray.

Step 2

Add the onion and garlic to the wok, and cook on a medium heat until they start to soften.

Step 3

Add the diced chicken breast and cook until it starts to colour slightly.

Step 4

Add the peppers and baby corn and cook for a few minutes.

Step 5

Add the courgette and sugar snaps and cook for another 2 or 3 minutes.

Step 6

Pour in the orange juice, sweetener, rice vinegar, tomato puree and chopped tomatoes.

Step 7

Stir well, then add the stock. Stir again.

Step 8

Cook for about 20 minutes until it starts to thicken slightly.

Step 9

Add the cucumber, spring onions and soy sauce. Stir.

Step 10

Place 200ml of the sauce into a jug and whisk in the xanthan gum a 1/4 of a tsp at a time. You will need to whisk well – and keep whisking!

Step 11

Return the thickened sauce to the pan and stir will – it will thicken the sauce.

Step 12

Toss in the pineapple, stir and remove from the heat straight away.

Step 13

Serve with rice or noodles and a sprinkling of freshly chopped spring onions.

From chilled: Place in a microwave proof container with a loosely fitting lid and heat for 5-7 minutes until piping hot.

From frozen: Allow to defrost, and heat covered in the microwave for 4-5 minutes then stir. Cook for a further 6-7 minutes until piping hot.

Ingredients

  • 1 onion diced
  • 2 cloves garlic crushed
  • 2 chicken breasts diced
  • 3 small to medium peppers deseeded and diced. One of each colour
  • 8 baby corn chopped
  • 1 courgette diced
  • 1 handful sugar snap peas cut in half
  • ½ orange Juice only
  • 2 tbsp granulated sweetener
  • 4 tbsp rice vinegar
  • 70 g tomato puree
  • 1 tin chopped tomatoes
  • 400 ml chicken stock
  • ¼ cucumber sliced
  • 4 spring onions chopped
  • 2 tbsp dark soy sauce
  • ¼ tsp xanthan gum
  • 1 handful fresh pineapple chopped
  • low calorie cooking spray

Instructions

Can I use any veg to replace the cucumber?

    Hi Claire. I’m not a lover of cucumber, so I usually just leave it out or replace with a few extra sugar snaps. You could replace it with any quick cooking veg you fancy though.

I cooked this tonight ,really nice. But I used two tbsp of light, two tbsp of dark soya sauce. And it was still very dark. Can I ask if you use the dark for colour or taste? Thanks in advanve.

    Perhaps yours needed reducing down slightly more? All ingredients can vary slightly in colour and fresh ingredients vary in water content.

How much sugar content has this got in because we are on a no sugar diet having lost 4.1/2 stone in 2 years by doing this going from a size 22 to a size 12/14 plus my husband is a diabetic so sugar is a no go for him
