We love corned beef hash, but with the high calories in tinned corned beef we thought that this dish would be off the menu forever. We were so excited when we discovered reduced fat corned beef, that we had to try it in our Corned Beef Hash recipe and it works really well!

Quick, easy and inexpensive, our Corned Beef Hash will be a hit with all the family – including the kids and teenagers! – and can easily be bulked out with more vegetables to feed more people if needed!

Step 1

Peel the potatoes, cut them into chunks, then cook them in boiling salted water until they are soft.

Step 2

While the potatoes are cooking wash and roughly chop the spring onions, and cut the corned beef into chunks and set them aside.

Step 3

When the potatoes are cooked drain them and roughly mash them. You don’t want it too smooth as the hash should be quite chunky.

Step 4

Mix the spring onion and corned beef into the mashed potato, then spray a frying pan with some low calorie cooking spray and heat it up.

Add the potato mix to the hot pan and allow it to cook until the bottom has browned. Flip the hash over and cook for a few more minutes.

Divide the hash into 3 equal portions and serve topped with a fried egg.

How do you know when Corned Beef Hash is cooked?

You should cook your Corned Beef Hash until the outside has browned. This should take a few minutes on each side.

From frozen: Allow to defrost, and heat covered in the microwave for 3-5 minutes then stir. Cook for a further 5-7 minutes until piping hot.

Ingredients

  • 1 tin lean corned beef
  • 750 g potato
  • 5 spring onions
  • 3 eggs
  • low calorie cooking spray

Instructions

The egg would add some moisture, you could add a splash of milk to loosen it, but may effect how much if crisps up.
