You can’t beat chips smothered in curry sauce and the chicken and crispy tortilla chips in our Loaded Fries with Katsu Curry Sauce gives this classic combo a fun twist!

A hand blender is the key to getting the Katsu sauce nice and smooth in this recipe, but if you prefer then you could use a food processor instead – either of these would work really well.

Our Loaded Fries with Katsu Curry Sauce are a great alternative to a traditional takeaway and they’re much lower in calories and Points too!  If you have any extra sauce or wanted to make it ahead then you freeze this to use at a later date – just make sure to freeze the sauce before adding it to the rest of the dish, no one likes soggy fries!

How many calories are in these Loaded Fries with Katsu Curry Sauce?

Preheat the oven to 220°c.

Spray the saucepan with low calorie cooking spray and gently fry the onions and garlic for a few minutes.

Step 3

Dissolve the stock cube in the boiling water. Add the carrots, potato, stock, curry powder, garam masala, onion granules, soy sauce and sweetener to the pan and bring to the boil. Then reduce the heat to a simmer and put a lid on the pan. It will need to simmer for around 40 minutes or until the carrots and potato are fully cooked and soft. Make sure to stir occasionally and add more water if it reduces too much.

Once the potato and carrot for the sauce have cooked through, use a hand blender or food processor to liquify the contents of the saucepan. A top tip is to blend twice as long as you think, you want the sauce to be super smooth! If the sauce seems too thick at this point, add some more water a little at a time until you reach the consistency you want. If it seems a little thin, reduce it on a low heat. This is all down to personal preference so don’t worry about getting it wrong!

While the sauce is cooking, line a baking tray with tin foil and spray with low calorie cooking spray. Place the fries onto the tray.

Step 6

Spray the fries with low calorie cooking spray and season with salt and pepper to taste. Toss until coated evenly.

Step 7

Spread the fries out on the tray, use a second baking tray lined with foil if there isn’t enough room.

Step 8

Place the fries into the middle of the preheated oven for 30 minutes. Carefully flip and respray with low calorie cooking spray before placing back into the oven for another 10 minutes, or until cooked through and crispy on the outside.

Step 9

When the sauce and fries have been cooking for around 30 minutes, heat a frying pan with low calorie cooking spray. Add the chicken and cook over a medium heat for 5 minutes, or until the chicken is cooked and white throughout. Set aside ready for assembly.

Step 10

Place the fries on the plate. Scatter the chicken over the top of the fries and pour over the sauce. Sprinkle the crushed tortilla chips over the top and serve.

How do you know when these Loaded Fries with Katsu Curry Sauce are cooked?

You should cook your Katsu sauce for around 40 minutes or until the potatoes and carrots are soft and cooked all the way through.  The fries should also take around 40 minutes and they should be crisp on the outside, but soft inside.

You’ll need to cook your chicken breasts for around 5 minutes or until they’re cooked through and white in the middle.

Standard advice here in the UK is to cook food until it has reached 70°C and stayed at that temperature for 2 minutes. This is to keep your family safe.

Can I cook these Loaded Fries with Katsu Curry Sauce any other way?

We’ve baked our fries, but you could also cook them in an air fryer by slightly reducing the cooking time (make sure to check the manufacturer’s advice for cooking times).

If you’d prefer, you can cook the sauce in a soup maker instead of on the hob – either way would work really well!

This dish really is best enjoyed fresh – nobody likes soggy chips!

Can I freeze Loaded Fries with Katsu Curry Sauce?

We don’t recommend freezing the completed dish, but if you want to make the sauce ahead or have any extra then this can be frozen.  Please remember to do the following:

  • Freeze it as soon as it is cold enough.
  • Use a container or bag that is suitable for freezing.

Don’t forget to add a label with what it is, and on what date you put it in the freezer!

Ingredients

  • 1 kg large potatoes sliced into 1/2cm fries
  • 2 skinless chicken breasts cut into 1/2cm chunks
  • 28 g plain tortilla chips crushed into crumbs
  • low calorie cooking spray
  • salt and pepper to taste

For the Katsu sauce

  • 1 medium onion peeled and roughly sliced
  • 3 garlic cloves peeled and crushed
  • 200 g carrots sliced into 1/2cm rounds
  • 115 g potatoes peeled and cut into 1/2cm chunks
  • 1 chicken stock cube
  • 500 ml boiling water
  • 2 tbsp curry powder
  • 2 tsp garam masala
  • 2 tsp onion granules
  • 1 tbsp soy sauce
  • 1 tsp sweetener

Great meal I found it fairly easy but over cooked the chips they got stuck in the foil ?.
