Blackened Salmon and Zingy Salad
You can’t have summer without salmon! We wanted to do something a bit different with everyone’s go-to summertime fish dish, and so our Blackened Salmon and Zingy Salad was born.
With this recipe, you want your fish to get a bit of colour while it cooks to flaky perfection. It’s known as ‘blackened’ because the aromatic home-style spice mixture chars in the pan to form a sealed crust of fragrant spices.
From pan to plate in 20 minutes, serve it over a colourful bed of carrot, avocado, sweetcorn and spring onion on a warm evening – you won’t regret it!
Cheese and Onion Bakes
Say goodbye to pastry with our Cheese and Onion Bakes! If you’re already a fan of our hugely-popular Steak Bakes, you’re sure to appreciate this fresh twist on a bakery classic. To keep things lower in calories without losing out on gooey deliciousness, we’ve loaded up crispy sandwich thins with a reduced-fat Cheddar and onion filling.
Try them as a snack or turn them into a proper lunchtime treat with a side of mixed salad – you could even serve them with Homemade Oven Chips, if you’re feeling hungry!
If you do make these, don’t forget to share a photo in our Facebook group! It’s no secret that our incredible community loves a good sandwich thin recipe.
FABulous Lollies
When it’s sunny out, slimming-friendly freezable treats are your best friend. So that our retro-inspired FABulous Lollies taste amazing (rain or shine!), we’ve used low-sugar strawberry squash and almond milk to form an eye-catching, slimming-friendly duo of layers.
Once your red and white lollies are set, it’s time to have some fun with chocolate! Take your lollies for a dip in a melted bowl of milk chocolate and decorate with a fun sprinkling of hundreds and thousands.
You can either place your lollies back into the mould until you’re ready for them, or enjoy them straight away (they’ll be so cold, the chocolate-sprinkle layer will set before your eyes!).
Chicken and Mango Burgers
Sweet, tangy and fiery all at once, these Chicken and Mango Burgers come brimming with tropical-style flavour. To make sure there are no hidden nasties in this dreamy barbecue dish, we’ve prepared our mildly-spiced chicken patties from scratch.
Piled high with crunchy salad veg, chilli-infused mango salsa and drizzled with sriracha mayo, it’s hard to believe they’re as light as 246 calories per serving!
Making burgers at home can cut costs and go a long way towards helping you stay on track when you’re hosting a fakeaway burger night. For blitzing your patty ingredients together, use a food processor – it’s always easier, quicker and cleaner.
Creamy Spinach and Parmesan Chicken
When we hear ‘creamy’ and ‘chicken’ in the same recipe title, we’re already sold! Our Creamy Spinach and Parmesan Chicken keeps things simple, and yet it tastes like an indulgent, restaurant-style dinner.
Quick, easy, creamy and cheesy, there’s really no excuse to say no – especially at 267 calories per serving!
Made with a short list of simple, easy-to-find ingredients, you can have this low-fuss dish ready in just over half an hour. Try it with steamed veggies, mash, rice or (our personal favourite) any kind of pasta shape.
If we’ve got you in the mood for chicken tonight, this blog article has even more creamy inspiration for you.
Strawberry and Feta Salad
Everything truly is better with feta, including our Strawberry and Feta Salad. A side dish that says ‘sunny weather’, it comes bursting with juicy strawberries, peppery rocket, tangy feta and crunchy pine nuts.
One way to add instant colour to your plate, it’s even better alongside your fresh-from-the-grill favourites – try it with meat, fish or any barbecued vegetarian alternative for a proper summer treat!
Don’t forget the all-important third and final step in the recipe – bringing the whole dish to life with a drizzle of our zingy homemade salad dressing.
Mini Tofu Kyivs/Air Fryer Mini Tofu Kyivs
We can’t get enough of these Mini Tofu Kyivs! Vegan and dairy-free, these meat-free dinnertime bites are hiding an irresistible creamy garlic and parsley filling.
Whether you pop them in the oven or bake them to perfection in the air fryer, you’ll know they’re ready when they’re piping hot and melting in the middle with a gloriously golden, crispy breadcrumb coating.
Make sure that you buy a firm block of tofu. You’ll need to press it really well before you start cooking, so that any excess water is removed and your delicate little Kyivs hold their shape.
They’ll go down a storm on your midweek menu with a side of fresh salad!
Creamy Strawberry Mini Meringues
We’re so ready to watch Wimbledon with a plateful of Creamy Strawberry Mini Meringues! Best served with sunshine (and a jug of Pimm’s!), you can try them all on their own or make them one adorable part of a larger slimming-friendly afternoon tea spread.
To give our crispy, chewy-in-the-middle meringues the taste of luxury for a fraction of the calories, they’re filled with a blend of granulated sweetener and reduced-fat cream cheese.
You can always sandwich your meringues together using a swirl of reduced-fat aerosol cream instead of our homemade filling (just take note of any additional calories, if you’re counting!).
