Pinch of Nom’s May Recipe Roundup
It’s been a month full of bank holidays and sunshine! We can’t deny we’re a little bit sad that May is already over. In true Pinch of Nom style, we spent the last few weeks coming up with unmissable recipes that can be enjoyed all summer long.
From a brunch-style breakfast, to your new favourite fakeaway, we’ve added plenty of delicious dishes to the website in May…and it won’t stop there!
We’re bursting with excitement for June – anyone else counting down the days until our FIRST EVER paperback cookbook hits the shelves? Curry and Chips Pie
If you’ve ever tried our Mushy Pea Curry recipe you’ll know it brings all the flavour of a chippy tea to the table, for a fraction of the calories. If that sounds like a good deal, just wait until you’ve tasted this Curry and Chips Pie.
We’ve tucked the magic mushy pea curry underneath a layer of super-satisfying golden chips. Baked to perfection, the whole concoction makes for a hearty dinner that tastes like a weekend-worthy treat (even though it’s only 361 calories per serving!).
Best of all, this recipe uses loads of cheap and cheerful ingredients, including lots of bits you probably already have in your kitchen cupboards.
Sausage, Spinach and Ricotta Lasagne
Swap beef mince for lean pork sausage and try the extra-tasty filling of our Sausage, Spinach and Ricotta Lasagne. Layered up with a homemade rich tomatoey sauce and a creamy ricotta and spinach mixture, this hearty, wholesome recipe is perfect for a midweek dinner.
Topped with plenty of cheese and baked in the oven until gorgeous and golden, this one’s the ultimate family friendly crowd-pleaser. Despite all the punchy flavours, sheets of pasta and cheese, each portion still works out at just 388 calories per serving.
Coronation Strawberry and Ginger Trifle
We were treated to an extra bank holiday in May to celebrate the King’s coronation, and we marked the occasion the only we know how – with a brand-new, delicious sweet treat!
Our Coronation Strawberry and Ginger Trifle may have been dreamed up for the coronation weekend, but it’s delicious all year round. Tuck into layers of low-fat cream, zingy ginger-infused custard, refreshing strawberry jelly and sticky ginger cake.
Whether you serve it as a showstopping centrepiece, or in individual dishes, it’s the perfect pud at the end of your meal (and it’s just 206 calories per serving!).
Sip on the drink of the summer! Our Pink Lemonade is so tasty and easy to make, you’ll want to have a jug stashed away in the fridge at all times.
Bursting with fruity, citrus flavour, it’s ultra-refreshing and free-from any nasties. Each glass is only 20 calories, so you’ll find it much lighter and less sugary than shop-bought versions.
Ideal for quenching your thirst on sunny days, we love to serve it ice cold with a sprig of mint to make it feel fancy! You won’t feel like you’re missing out on cocktails one bit when you have a pitcher of this on the table.
Piri Piri Chicken Orzo
Calling all one-pot wonder lovers! If you missed this Piri Piri Chicken Orzo when we added it to the website, take this as a sign to add it to your meal plan this week. It honestly couldn’t be easier to throw it together, and you’ll be obsessed with how much flavour you can create with so little effort.
A winning combination of medium-spicy chicken, bright, colourful vegetables and filling orzo pasta, it’s a complete meal all cooked in one dish. We’ll take any excuse to skip the piles of washing up after dinner!
Prawn Tikka Masala
Planning a weekend fakeaway night? We’ve given another one of our all-time favourite Indian-inspired dishes a magical Pinch of Nom makeover. There’s no actual magic involved with rustling up this Prawn Tikka Masala – instead you’ll just need a few slimming-friendly ingredients.
While a Prawn Tikka Masala from the takeaway is usually made from prawns, tomatoes, Indian-style spices and indulgent cream, we’ve used fat-free Greek yoghurt to thicken our sauce. You’ll hardly be able to tell the difference, but it really lightens up the recipe, so each serving works out at just 195 calories!
Avocado Salsa Eggs Florentine
Breakfast, brunch, lunch or dinner, there’s never a bad time to tuck into this Avocado Salsa Eggs Florentine. A delicious way to spice up your mornings, we’ve livened up poached eggs on toast with vibrant smashed avocado and a silky homemade chipotle-infused cheese sauce.
The Mexican-style flavours make this simple recipe a must-try. On the table in just over 20 minutes, it’s speedy enough to whip up on a lazy Sunday morning and guaranteed to leave you feeling wide awake!
Chicken and Pickled Veg Baguettes
Sweet, salty and sour, these Chicken and Pickled Veg Baguettes are a treat for your taste buds! Far from your typical chicken sandwich, they’re an easy way to make lunchtimes more interesting (and more delicious).
Inspired by the Vietnamese dish Banh Mi, we’ve packed our crusty bread rolls full of tender chicken and crunchy pickled vegetables. The sharp, sour veggies are the perfect partner to the sweet marinade on our juicy chicken slices, and we’ve added some sriracha mayonnaise to ramp up the flavours even further.
Pesto Potato Salad
Just when you thought potato salad couldn’t get any tastier, we’ve only gone and added a herby pesto twist! This Pesto Potato Salad deserves to make an appearance at BBQs and buffets all summer long.
Easy to make and slimming friendly, it’s so simple yet effective. Even though we’ve swapped mayo for fat-free Greek yoghurt, we promise this turns out just as creamy as you’d hope. We’ve even used a jar of readymade, shop-bought pesto to really cut down on prep time.
Once you’ve made a batch, you can keep them in the fridge for up to 3 days – ideal if you’re getting organised ahead of a big family barbecue!
Air Fryer Rustic Potato Wedges
If you’re a faithful follower of Pinch of Nom, you might know that our Rustic Potato Wedges were around long before air fryers were everywhere. We couldn’t help coming up with a revamped version of the recipe, and that’s how these Air Fryer Rustic Potato Wedges came to be.
Incredibly crisp on the outside and fluffy in the middle, these really do give restaurant versions a run for their money. You’ll only need a couple of spuds, a handful of spices and a spritz of low-calorie cooking spray to give our recipe a whirl yourself. They go with just about anything: try them with a burger, Chilli Con Carne or your favourite salad recipe.
There’s always room for dessert with these Rainbow Jellies on the menu! At 14 calories each, they’re the ultimate way to curb those sweet cravings without falling off the wagon.
To give each wibbly, wobbly layer a bit of a bite to it, we’ve combined fresh fruit with a complementary flavour of jelly. You can always add a personal touch to this by experimenting with different jelly and fruit combos!
The key to this recipe is all in the waiting. You’ll need to let each layer set completely before adding the next one. It takes a little bit of patience, but you know what they say – good things come to those who wait!
