Everyone loves a hearty stew, and it’s one of our go-to dishes as the nights start to get darker and colder. You can’t beat a bowl of hot stew, and we’ve packed this one with all the flavours of Italy!

We used Heck Chicken Italia sausages in keeping with the theme, but any low-fat sausage works well, even pork sausages.

Stews are a great way of sneaking in extra veggies for a fussy family too. We’ve used peppers, onions and courgettes, but you could throw in any leftovers to make this dish even more budget-friendly. Simply finely dice and add.

With a rich, garlicky sauce, this stew really packs a punch in terms of flavour! When you add in beans and pasta, you have a really filling dinner that’s satisfying and substantial for any night of the week.

Serve with a wedge of crusty bread for dipping – delish!

What diets is this Italian-Style Sausage Stew suitable for?

Italian-Style Sausage Stew can be suitable for gluten free diets if you swap out the stock cubes and pasta for gluten free versions. Alternatively, you could use potatoes instead of pasta.

If you’re cooking for people with allergies, be extra careful when checking ingredients and preparing food!

Do you need any special ingredients to make Italian-Style Sausage Stew?

We’ve used a specific brand of sausages, Heck Chicken Italia, as they’re already lightly spiced with Italian herbs. They’re available at most supermarkets, although you could use any sausage you like, but be mindful of any changes to the nutritional info!

Low-fat pork sausages would work well in this dish, or you could even try a slightly smoked sausage for a deeper flavour. Why not experiment, and let us know your favourite?

We enjoyed it with double the herbs
Delicious
Used macaroni first time which was nice but then have since tried Orzo which we preferred!

Could I substitute the pasta for chopped white potatoes?

Reply

    SharonThursday 18th May 2023

Hi SAnderson, yes, you could substitute potatoes for the pasta if you prefer. Cut them into small evenly sized chunks and add to the pan in step 3 with the onions, peppers, carrots and courgettes. Hope this helps.

Delicious! We didn’t have quite enough sausages so put a little diced chicken breast in at the same time as the beans and pasta, worked a charm!

Hi from Canada! My UK sister told me about your recipes so I plan to try this plus a few others. Love all the conversions you offer! Would a red or green pepper work instead of courgette or is there another substitute you recommend? Thanks!

When you say cover and cook, do you still mean cooking on the hob or putting it into the oven? Thanks!

Hi

Sounds silly, but if i was this for 2 portions instead of 4, would it be 1 stock cube ton375ml water? When i asjust the portions it says 1 stock cube but still to 750ml water?
Thank you,

Reply

    HollyFriday 26th February 2021

Hi Emma, yes that’s correct half the water the same as the other ingredients. I have amended the recipe to list the water as a separate ingredient so this should now alter the measurement when altering the serving sizes. Hope that helps!

When you say 150g of dried pasta is that 150g dried before it’s cooked or 150g of cooked pasta? Just it swelled up a lot and there was loads of it. Thank you

Reply

    LisaFriday 29th January 2021

    Hi Emily
Yes, it is 150g of dried pasta. It goes in the pan raw and will swell as it cooks and absorbs the liquid in the stew.

Could the cannellini beans been swapped for butterbeans or chickpeas?

Reply

    LisaSunday 24th January 2021

Yes, they could. Butter beans would probably work better as they have a similar creamy texture to canellini. Chickpeas have a harder texture.
