There is no cooking required in this recipe so it’s perfect for a quick mid-week dessert or as an indulgent brunch.

This recipe combines sweet, creamy and crunchy for a truly delicious dessert. We have used cornflakes for our crunch but you could use something other than cornflakes in this recipe…maybe crush up an Alpen Light bar!

Whatever you use, it’s better to assemble it when you’re ready to eat so that the cereal layer doesn’t go too soggy.

Ingredients

  • 100 g quark
  • 50 g fat free yoghurt
  • ¾ tbsp granulated sweetener
  • ½ tsp vanilla extract
  • 30 g fresh blueberries
  • 6 - 8 strawberries cut into quarters
  • 5 g cornflakes
  • 1 sprig fresh mint

Instructions

  1. Add the quark, yoghurt, granulated sweetener and vanilla extract to a bowl and mix together well. You can add a little extra sweetener or vanilla if you prefer it a bit sweeter.
