Our Beetroot and Mint Hummus-Style Dip is such a tasty and quick dip to make – just throw everything into a blender/food processor/bowl and attack it with a stick blender!

Inspired by Mr Marks & Spencer, we had the most amazing trio of dips from them at a barbecue in the summer and we just HAD to create our own slimming friendly version!

We love ours served with crudités (we pronounce them crud-ites – we’re not that posh!) and we think that it might actually be harder to prepare these than it is to make the dip!  Top tip: cut your carrots, cucumber, celery length ways and on a diagonal to really help them scoop up as much hummus as possible without it dropping.

We’ve used ready cooked beetroot in this Beetroot and Mint Hummus-Style Dip recipe, but you could probably use a large pickled one instead if you prefer. Just leave out the white wine vinegar, as you probably won’t need it.

You’ll also need a good handful of fresh mint.  If you can’t get hold of any, then you can use 3 tsp of mint sauce instead just double check the nutritional values though as these can vary.

Ingredients

  • 1 400g tin butter beans drained
  • 1 cooked beetroot you can use pickled beetroot see note above
  • 1 handful fresh mint chopped. You can use mint sauce - see note above
  • 1 lemon juice of
  • salt
  • 2 tsp white wine vinegar

Instructions

  1. Tip all the ingredients into a blender/food processor/bowl and attack with a stick blender.
  2. Season to taste and serve with your favourite crudités!
