This delicious recipe came from one of the members of our Facebook group. Janet has been a member of our Pinch of Nom Facebook group member for a while now and really enjoys posting on the page and reading other people’s inspirational posts. She describes herself as the resident baker at her local weight loss group and we loved her recipe so much that we just HAD to share it with you!
The coffee in this recipe is a clever addition as it gives it the hint of bitterness that you’d get from a good dark chocolate, without the additional Points or calories. If you don’t like coffee, then this can be left out but we think that it really does add to the depth of flavour.
Although it doesn’t have a biscuit base, the clever oaty topping on this Chocolate Mud Pie really gives it some crunch. It will last for several days in the fridge…if you can resist!
You can enjoy this recipe on its own or even serve it with some fresh fruit – strawberries or raspberries would be soooo delish!

How many calories are in this Chocolate Mud Pie?
Standard, shop-bought cheesecakes tend to have hundreds of calories for just a small sliver, but this Chocolate Mud Pie is different and will really sort out a chocolate craving!
Our Chocolate Mud Pie has just 125 calories per portion which means it falls into our Everyday Light category.
This Chocolate Mud Pie is perfect if you’re following a calorie controlled diet and fits well with any one of the major diet plans such as Weight Watchers.
As a guide, an average man needs around 2,500kcal (10,500kJ) a day to maintain a healthy body weight. For an average woman, that figure is around 2,000kcal (8,400kJ) a day. Obviously, if your goal is to lose weight then you might want to adjust these slightly! You can read more about these recommendations on the NHS website.
For the mud pie
Step 1
Preheat the oven to 200°C, and line an 8 inch, loose bottomed cake tin with baking parchment.
Step 2
In a large bowl, mix together the quark, Philadelphia, eggs, granulated sweetener and chocolate extract. Add the coffee granules to the boiling water and add to the mixture. Sift in the cornflour and cocoa powder and stir well to ensure it is thoroughly mixed.
Step 3
Pour the mixture into the lined cake tin and bake for 10 minutes in a hot oven. Turn the oven down after this time to 140°C and bake for a further 25 minutes. Check the cheese cake after this – it should have a slight wobble with no runniness.
Step 4
Leave to cool completely and refrigerate for an hour before adding the topping.
For the topping
Step 1
In a dry frying pan, add the caster sugar and oats. It is important to use sugar and no sweetener for this. Leave on a moderate heat, moving the pan occasionally until the sugar has melted and oats have toasted. Leave to cool.
Step 2
Once the cheesecake has been refrigerated, take the choc shot and spread gently around the edge of the top of the cheese cake. Crush up the caramelised toasted oats as you sprinkle them around the edge and pat gently so they stick to the choc shot.
Step 3
Using a fine grater, grate over the dark chocolate into the centre of the cheesecake. Carefully remove from the tin and slice into 10 pieces and serve.

You should bake this Chocolate Mud Pie for around 35 minutes or until it has a slight wobble with no runniness.
Standard advice here in the UK is to cook food until it has reached 70°C and stayed at that temperature for 2 minutes. This is to keep your family safe.
