This Creamy Tomato Vodka Pasta is slimming friendly and so delicious – a great meal if you’re counting calories or following Weight Watchers!

It’s a great way to use up that Christmas vodka lurking at the back of the cupboard and it’s perfect recipe for easy entertaining, as you can have it done and on the table in less than 30 minutes.

Usually Vodka Pasta, or Pasta alla Vodka, is made with heavy cream, which isn’t very slimming friendly. We’ve cut the Points and Calories right down reduced fat cream cheese.

You could always add some chicken or prawns if you don’t fancy the vegetarian version – similarly you could substitute the Henderson’s Relish for Worcestershire Sauce depending on your preferences!

I used red onion as recipe didn't specify and used extra chilli flakes for additional kick. All store cupboard ingredients so cheap to make and very filling
I made with tubed pasta which was great having the sauce inside also made with a little less vodka, added some diced yellow pepper and finished with a sprinkle of cheese and herbs instead of the basil leaves. Served with some small garlic croutons.

Return to the heat and stir in the tin of chopped tomatoes, Henderson’s Relish and veg stock.

Simmer for 5 minutes, add the tomato halves. Check the pasta and drain when cooked.

Remove the sauce from the heat, stir in the cream cheese and season to taste. Stir in the chopped basil.

Ingredients

  • 400 g fusilli pasta or the pasta of your choice
  • 1 tin chopped tomatoes
  • 20 cherry tomatoes cut in half
  • 4 cloves garlic finely chopped/crushed
  • 1/2 onion finely chopped
  • 1/2 yellow pepper finely diced
  • 4 spring onions finely chopped
  • 450 ml vegetable stock made up with 1 veg stock cube
  • 35 ml vodka
  • 3 tbsp tomato puree
  • 125 g reduced fat cream cheese
  • low calorie cooking spray
  • sea salt
  • freshly ground black pepper
  • 1 handful fresh basil chopped
  • 1 tsp Henderson's Relish
