Creating our slimming friendly Gingerbread Bites whilst trying to keep that authentic gingerbread flavour has been tricky!

Traditional gingerbread recipes usually require both brown sugar and golden syrup to produce that caramel sweetness, neither of which would work as a low calorie option.

After a few attempts, we came up with our tasty Gingerbread Bites. Our spicy and sweet low calorie alternative to traditional gingerbread.

We’ve topped ours with a drizzle of Sukrin Icing, but you can use normal icing (don’t forget to count the calories and Points etc). Or you could just dust them with some Sukrin Icing or normal icing sugar (again check the nutritional values for the normal icing sugar).

We suggest using a 5cm cookie cutter for this recipe. This should give you around 28 biscuits.

We use Sukrin Gold which is an all-natural granulated stevia sweetener alternative to sugar with zero calories.

Sukrin Gold doesn’t have that strange after taste that a lot of artificial sweeteners do! It also shares the exact same sweetness and weight to sugar – which makes it really easy to substitute in recipes like this Strawberry Oat Muffins.

If you are using a powdered sweetener, then please check how it compares to sugar. In some cases, you’ll need to use less, as powdered sweeteners weigh less.

That being said you don’t have to use Sukrin – there are lots of other high quality granulated sweeteners available from the supermarket, such as Canderel Sugarly, and Natvia.

How many calories are in this Gingerbread Bites recipe?

There are 35 calories per portion in this Gingerbread Bites, which means it falls into our Everyday Light category.

These Gingerbread Bites are perfect if you’re following a calorie controlled diet, and fits well with any one of the major diet plans such as Weight Watchers.

As a guide, an average man needs around 2,500kcal (10,500kJ) a day to maintain a healthy body weight. For an average woman, that figure is around 2,000kcal (8,400kJ) a day. Step 1

Preheat the oven to 180°C.

Step 2

Mix all the dry ingredients (except the granulated sweetener) together, then rub in the Flora Light until you reach the breadcrumb stage.

Step 3

Stir in the granulated sweetener.

Step 4

Mix in the beaten egg, and stir to form a dough.

Step 5

Tip out the dough onto a clean lightly floured surface and knead for a few minutes until it’s smooth.

Step 6

Roll out the dough (approx 1/4″ or 5mm thick) then use a 1.5 inch round cutter to cut out 28 – 30 shapes.

Step 7

Place them on a non stick baking tray, sprayed with a fine mist of Low calorie cooking spray, and bake for 10 – 15 minutes until golden brown.

Step 8

Allow to cool, then either ice with some Sukrin Icing or just dust them with some Sukrin Icing sugar, it’s up to you.

  • 200 g Plain Flour
  • 60 g Flora Light
  • 60 g Granulated Sweetener
  • 1 large Egg or 2 small - beaten
  • 4 tsp Ground Ginger
  • 2 tsp Ground Cinnamon
  • 1 tsp Bicarbonate of Soda
  • Low calorie cooking spray
  • Granulated Sweetener optional

My husband made this recipe at the weekend and all looked good but tasted sickly sweet. He added 60g of splendid granulated sweetener. Reading on am I right in thinking he should have only added 12g. It says one spoon of sweetener (0.5g) is equal to 1 spoon of sugar (5g). Can someone correct me if I am wrong please.

I’ve just made these for the second time. The first time I couldn’t get Sukrin Gold so used a white sweetener. They tasted lovely but came out speckled black. This time I used the Sukrin Gold (thinking the speckles had been the other sweetener burning) but they are still speckled! The ones in the pic above are a consistent golden brown colour… Any suggestions where I’m going wrong?

Just checked Amazon for the Sukrin Gold….OMG!!! Is that really the price…. £46 for 500g on the link it took me too. No way is that value for money.

These look great! Just made the jaffa cakes using the recipe shared last week – they were a great success, so these ginger biscuits might just be my next attempt! Very impressed with the Sukrin Gold – expensive but worth it.
