You generally find cannelloni stuffed with spinach and ricotta or minced beef in a tomatoey sauce, but here at Pinch of Nom we love testing out weird and wonderful combinations until we find a winning dinner!

We decided to combine two comforting flavours into something a little different. Soft leeks and ham in a mustardy creamy cheese isn’t exactly a traditional Italian combination, but it goes great with our garlicky tomato sauce.

We’ve used some clever swaps to keep this dish light, such as reduced fat spreadable cheese for a rich sauce without a pot of cream in sight!

Hot and filling, this Ham and Leek Cannelloni is the ultimate hearty dinner when you can’t decide whether you fancy a ham and leek pie or a cannelloni dish: now you can have the best of both worlds!

Serve alongside a fresh salad for a showstopping dinner that’s so easy to make and looks great on the table.

How many calories are in this Ham and Leek Cannelloni?

Dissolve the stock cube in the boiling water. Stir in the tomatoes and stock and bring to the boil. Reduce the heat and allow to simmer for 15 minutes while you prepare the cannelloni.

Spray a frying pan with low calorie cooking spray and sauté the leeks for 5 minutes over a medium heat, until soft, then place in a mixing bowl and allow to cool for 5 minutes.

Mix the cream cheese, ham, mustard and garlic granules into the cooled leeks, and season with salt and pepper.

Fill the cannelloni tubes with the ham and leek mix, using a blunt knife to push the filling right down.

Pour half the sauce into the ovenproof dish and arrange the filled cannelloni on top. Pour the remaining sauce on top, ensuring the pasta is fully covered.

Tear the mozzarella into small pieces and scatter over the top.

Bake in the oven for 35-40 minutes until the pasta is tender.

How do you know when Ham and Leek Cannelloni is cooked?

You should cook this Ham and Leek Cannelloni until the pasta is tender. This will take around 35 minutes in the oven.

Standard advice here in the UK is to cook food until it has reached 70°C and stayed at that temperature for 2 minutes. This is to keep your family safe.

From chilled: Place in a microwave proof container with loosely fitting lid and heat for 4-7 minutes until piping hot. Alternatively, you can reheat from chilled in an ovenproof dish in a moderately hot oven for 15 to 20 minutes, until piping hot.

From frozen: Allow to defrost and heat covered in the microwave for 3-5 minutes then stir. Cook for a further 5-7 minutes until piping hot.

Ingredients

For the sauce

  • 400g tin of chopped tomatoes
  • 1 onion finely chopped
  • 1 tsp Italian herbs
  • 1 tsp garlic granules
  • 1 ham or chicken stock cube
  • 300 ml boiling water

For the filling

  • 8 cannelloni tubes
  • 150 g cooked, lean ham finely chopped
  • 1 leek finely sliced
  • 120 g reduced fat spreadable cheese
  • 1 tsp garlic granules
  • 1 tsp mustard powder
  • 120 g reduced fat mozzarella
  • salt and freshly ground black pepper
  • low calorie cooking spray

I can’t get cannelloni tubes can I roll fresh lasagna instead. I’d probably get 2 out of a slice?

    Hi Anita, yes, you could use fresh lasagne sheets instead of cannelloni tubes. If you roll a sheet up along it’s length, you should be able to make 2 cannelloni out of one sheet. The dish will need less time in the oven if you’e using fresh pasta, you could try 20 – 25 minutes.
