Mini Banana Cakes with Chocolate Chips

Ingredients

  • 56 g self raising flour
  • 2 whole eggs
  • 2 eggs separated into white and yolks
  • 1 tsp vanilla extract or essence, or you could use banana essence
  • 1 tsp baking powder mashed
  • 200 g bananas peeled and mashed
  • 2 tbsp granulated sweetener
  • 25 g dark chocolate chips

Instructions

  1. Pre heat the oven to 180°C.
  2. Sift the four and baking powder in one bowl.
  3. Add the essence, sweetener and mashed bananas.
  4. Crack the whole eggs into the bowl along with the separated egg yolks and mix well.
  5. In a clean bowl whisk the separated egg whites until very stiff and gently fold into the flour mixture.
  6. Pour into a 24 cup silicone mini muffin silicone tray sprayed with low calorie cooking spray and sprinkle the chocolate chips evenly over the top (2 or 3 on each). You will have some mix leftover so you will have to refill the tray once the first batch is cooked so reserve some chocolate chips.
  7. Cook at 180°C for about 10 minutes. Allow to cool slightly then remove the muffins from the tray. Pour the rest of the mixture into the silicone mini muffin tray, top with the remaining chocolate chips and bake for 10 minutes.
