Nothing says Christmas like the winning combination of mixed spice, dried fruit and sherry. Luckily for you, we’ve incorporated all these festive flavours into our Mini Christmas Cakes recipe.

These Mini Christmas Cakes are a slimming friendly version of the traditional dense Christmas cakes, meaning they are perfect if you’re counting calories or following Weight Watchers.

These Mini Christmas Cakes are the perfect Christmas snack or dessert for those not looking to overindulge during the festive season.

If you don’t like sherry, you can replace it with another Christmas spirit, spiced rum would work well or even orange juice. However you make them just be prepared to eat more than one as they are incredibly moreish!

We used Sukrin Almond flour which you can get from Sainsbury’s and other online places, but you can get defatted almond flour from Amazon too! Just make sure you check the nutritional values of whichever brand you use

Step 1

Preheat the oven to 160°C. In a small bowl add the sherry and mixed fruit.

Step 2

In a large mixing bowl add the almond flour, eggs, black treacle, sweetener, mixed spice and baking powder and mix well until fully incorporated.

Step 3

Once the mixed fruit has plumped up, add it, and the remaining sherry from the bowl into the cake mix. Stir well.

Step 4

Spray a silicone muffin tin with low calorie cooking spray and spoon in the cake mixture, making sure to evenly distribute the fruit. Bake for 25 minutes.

Step 5

Remove from the oven, take out from the silicone cake tin carefully and place on a wire rack to cool.

Step 6

Meanwhile, in a small bowl, mix the icing sugar and water to form an icing. Once the cakes are completely cool, drizzle with icing and serve!

How do you know when these Mini Christmas Cakes are cooked?

The sponge should be springy to the touch. You can use a skewer to check if the centre is cooked, simply insert the skewer through the top of the cake to until you hit the base. When you remove the skewer from the cake it should be clean.

Ingredients

For the cakes

  • 50 grams Defatted Almond Flour such as Sukrin Almond Flour
  • 50 grams Mixed Dried Fruit
  • 5 Eggs
  • 1 tsp Baking Powder
  • 25 ml Sherry
  • 2 tbsp Black Treacle
  • 4 tbsp Granulated Sweetener
  • 2 tsp Mixed Spice
  • Low calorie cooking spray

For the Icing

  • 25 grams Icing Sugar
  • 2 tsp Water
