This Red Pepper Hummus-Style Dip is so simple and it couldn’t be quicker to make – just throw everything into a blender/food processor and blitz!

Make sure to pick roasted red peppers in a jar of brine and not oil as these will help to keep your Red Pepper Hummus-Style Dip low on calories and Points.

We prefer roasted red peppers from a jar as they have a really sweet, intense flavour.  But, if you wanted to roast your red peppers in the oven then you can just place them on an oven tray and spray with low calorie cooking spray. Cook at 150°C-180° for 30 minutes or so.

The smoked paprika gives this Red Pepper Hummus-Style Dip a really tangy flavour, but it’s entirely optional and you can always leave it out if you’d prefer!

Ingredients

  • 400g tin butter beans drained and rinsed
  • 2 pieces red pepper from a jar (in brine not oil)
  • 2 cloves garlic
  • 1 tsp smoked paprika
  • 1 lemon juice only
  • sea salt

Instructions

  1. Place all the ingredients into your blender/food processor and pulse until it reaches your desired consistency. If the mix seems a bit dry you can add a little water or some of the liquid from the pepper jar.
  2. You might want to add more seasoning depending on how you like it!
