These Strawberry Oat Muffins were suggested in our Facebook group and are really great for a sweet snack – or even breakfast! The added strawberry essence makes these golden bakes really fruity, and they work especially well when paired with a scoop of strawberry yoghurt and some freshly chopped strawberries – you can never have too many berries!  If you do want to tone down the berry flavours, then creme fraiche would also make a great accompaniment.

If you make up a large batch of these muffins then you can just keep them in an airtight container for an easy grab and go snack. They’ll last you a good few days!

We’ve used Sukrin Gold in this recipe as it doesn’t have that strange aftertaste that a lot of artificial sweeteners do! It also shares the exact same sweetness and weight to sugar – which makes it really easy to substitute in recipes like these Strawberry Oat Muffins.

Ingredients

  • 80 g oats
  • 115 g fat free strawberry yoghurt
  • 1 tsp strawberry essence
  • 3 medium eggs
  • tbsp granulated sweetener
  • 6 fresh strawberries washed, dried and stalks removed
  • low calorie cooking spray
