This super easy, slimming friendly Tomato and Basil Soup is a hearty bowl of goodness, perfect to enjoy if you’re counting calories or following a plan like Weight Watchers!

This soup is so quick and simple to make and it’s full of flavour.  The orzo pasta in it makes it really filling and hearty which is perfect for the cooler evenings when it’s good to have something warming and delicious to eat!

We like to top our soups with interesting garnishes like the parmesan ‘crisp’ that we’ve used for this Tomato and Basil Soup.  To make this beautiful topping, just finely grate a small amount of parmesan onto a silicone baking sheet and pop it into the oven for a couple of minutes until golden.  Leave to cool and it’ll crisp up nicely – absolutely delish!

What diets is this Tomato and Basil Soup suitable for?

This Tomato and Basil Soup recipe is suitable for dairy free and vegetarian diets.

It can be made gluten free as long as you swap out the following ingredients for gluten free versions:

This soup is really easy to make, and just needs some basic kitchen equipment.  A herb chopper is a really useful kitchen tool, especially when you have a lot of herbs to chop!

Another useful kitchen gadget used in this Tomato and Basil Soup is a garlic crusher.  We use garlic in sooooo many recipes and having a good crusher is essential!

How many calories are in this Tomato and Basil Soup?

There are 187 calories per portion in this Tomato and Basil Soup, which means it falls into our Everyday Light category.

This Tomato and Basil Soup is perfect if you’re following a calorie controlled diet and fits well with any one of the major diet plans such as Weight Watchers.

As a guide, an average man needs around 2,500kcal (10,500kJ) a day to maintain a healthy body weight. For an average woman, that figure is around 2,000kcal (8,400kJ) a day. Obviously, if your goal is to lose weight then you might want to adjust these slightly! You can read more about these recommendations on the NHS website.

How do you know when Tomato and Basil Soup is cooked?

Make sure the onions have softened on a low heat in the saucepan. After adding the rest of the ingredients, simmer and then add most of the chopped basil. Simmer for another 5 minutes on a low heat before stirring in the remaining fresh basil.

Standard advice here in the UK is to cook food until it has reached 70°C and stayed at that temperature for 2 minutes. This is to keep your family safe.

How long can you keep Tomato and Basil Soup in the fridge?

Once you’ve put it out, ideally you should eat it within 4 hours.

If you allow any leftovers to cool, make sure to refrigerate in a container with a lid and chill. You can keep leftovers of Tomato and Basil Soup in the fridge for approximately 3 days or so.

Can I freeze Tomato and Basil Soup?

Yes you can! This recipe can be frozen, but please remember to do the following;

  • Freeze it as soon as it is cold enough.
  • Use a container or bag that is suitable for freezing.

Don’t forget to add a label with what it is, and on what date you put it in the freezer!

How do I reheat Tomato and Basil Soup?

From chilled: Place in a microwave proof container with loosely fitting lid and heat for 4-7 minutes until piping hot.

From frozen: Allow to defrost, and heat covered in the microwave for 3-5 minutes then stir. Cook for a further 5-7 minutes until piping hot.

    Hi Sam
We haven’t tried this recipe in a soup maker, but I can’t see any reason why it wouldn’t work. Refer to your particular models manual to help with timings.

Absolutely delicious for my work lunch. I added turkey breast which was a great addition. So tasty. My new low point lunch fave! I did mine in my pressure cooker which made it even better easier! Thank you!

Can you use fresh tomatoes, rather than tinned and how many would you recommend

Reply

    Cate MeadowsTuesday 8th September 2020

You could, but depending on the season the fresh tomatoes may not be as flavoursome. About 6 average sized tomatoes should replace 1 tin. Hope that helps! 🙂

Thank you

    Hi Deb.
You could use any small pasta shape. You might need to cook it a little longer though.
    Hope this helps.

Why is there orzo in it?

Reply

    Sharon FitzpatrickFriday 8th May 2020

Hi Heather, thanks for your question. The Tomato and Basil Soup has orzo in it to make this soup more satisfying, and will help you to feel full for longer. It is added in the same way that some soups have pearl barley or lentils added to them. Hope this helps.
