This super easy, slimming friendly Tomato and Basil Soup is a hearty bowl of goodness, perfect to enjoy if you’re counting calories or following a plan like Weight Watchers!

This soup is so quick and simple to make and it’s full of flavour.  The orzo pasta in it makes it really filling and hearty which is perfect for the cooler evenings when it’s good to have something warming and delicious to eat!

We like to top our soups with interesting garnishes like the parmesan ‘crisp’ that we’ve used for this Tomato and Basil Soup.  To make this beautiful topping, just finely grate a small amount of parmesan onto a silicone baking sheet and pop it into the oven for a couple of minutes until golden.  Leave to cool and it’ll crisp up nicely – absolutely delish!

This soup is really easy to make, and just needs some basic kitchen equipment.  A herb chopper is a really useful kitchen tool, especially when you have a lot of herbs to chop!

Step 1

Spray a saucepan with low calorie cooking spray and cook the chopped onions on a low heat. Add the garlic and cook for 30 seconds.

Step 2

Add the orzo, tinned tomatoes, tomato passata, stock pot, water and dried oregano and simmer.

Step 3

After 5 minutes, add most of the chopped basil and stir. Simmer for another 5 minutes on a low heat.

Step 4

Take off the heat, stir in the remaining fresh basil and serve immediately!

How do you know when Tomato and Basil Soup is cooked?

Make sure the onions have softened on a low heat in the saucepan. After adding the rest of the ingredients, simmer and then add most of the chopped basil. Simmer for another 5 minutes on a low heat before stirring in the remaining fresh basil.

Standard advice here in the UK is to cook food until it has reached 70°C and stayed at that temperature for 2 minutes. This is to keep your family safe.

How long can you keep Tomato and Basil Soup in the fridge?

Once you’ve put it out, ideally you should eat it within 4 hours.

If you allow any leftovers to cool, make sure to refrigerate in a container with a lid and chill. You can keep leftovers of Tomato and Basil Soup in the fridge for approximately 3 days or so.

Ingredients

  • 1 tin tinned tomatoes
  • 1 carton tomato passata
  • 1 bunch fresh basil chopped
  • 100 grams dried orzo pasta
  • 1 onion finely chopped
  • 2 cloves garlic crushed
  • 1 tbsp dried oregano
  • 1 vegetable stock pot
  • 100 mls water
  • low calorie cooking spray

Instructions
