One of our Facebook Group members, Liz, adapted our Chocolate Brownies recipes by changing a couple of ingredients! We’ve refined it and these are possibly the best slimming friendly cakes ever!

If you feel like getting creative then you could also add some raspberries or other soft fruit to this recipe – just remember to adjust the nutritional values of anything you add accordingly!

These White Chocolate Blondies are rich, sweet and sticky and they’re perfect with a glass of milk or your afternoon cuppa!

These White Chocolate Blondies are really simple to make! If you don’t already have one then you’ll need an 8″ square baking tin like this one from Amazon.

Mix half of the white chocolate chips into the cake mix and pour into the baking tin.

Scatter over the remaining white chocolate chips and place in the oven for 15 minutes until golden but still slightly squidgy. Leave to cool in the tin.

Ingredients

  • 100 grams self raising flour
  • 50 grams reduced fat spread softened
  • 4 medium eggs
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • 1 vanilla pod optional ingredient - just add the seeds from the pod
  • 4 tsp Sweet Freedom Fruit Syrup
  • 50 grams white chocolate chips
  • 4 tbsp granulated sweetener
  • low calorie cooking spray

Could you use the juice from tinned fruit instead of the fruit syrup? I am struggling to find it in Sweden.

    Hey Shonelle, Sweet Freedom fruit syrup is a syrup similar in consistency to golden syrup so I don’t think tinned fruit syrup would work. It is available in larger supermarkets and online. Hope that helps!

I’ve baked these a few times and they are scrummy, Amazon do the fruit syrup and they are a little bit “stodgy” in the middle but in my opinion it adds to the overall flavour. The biggest issue is getting into the freezer before I eat them all

Loved this the first time, however it didn’t cook the whole way through and the middle was really stodgy! So had to throw that bit out!
Any suggestions? I’ve heard this can happen when using sweetener instead of sugar, is there a way to make sure it cooks?

    Hi Brogan, your oven may be running a little too hot as it sounds like the outside of the brownies are cooking faster than the middle try lowering the temperature of the oven to get a more even bake and leave them to cool in the tin as this carries on the cooking process, hope that helps!

I couldn’t find the sweet freedom fruit syrup anywhere so I tried the sweet freedom salted caramel syrup instead and OMG they’re absolutely delicious!! The chocolate brownies were a firm favourite of mine but I think these might take the new no.1 spot! Thank you PON your recipes are literally filling me with so much joy during lockdown!

    Hi Rhiannon, we haven’t tried your suggestion, so we would advise against this, as it may affect the finished result. Missing out ingredients in baked goods like cakes can make a big difference and they might not work.

Made these just now and my oh my they were yuuummy! Replaced the granulated sugar with agave syrup and the fruit syrup with the juice from a fruit pot as had neither in the house, and it was scrumptious! Thank you PON, this has satisfied my sweet craving!
