Pre-heat the oven to 200ºC. Line a baking tray with a sheet of non-stick baking paper.
Spray a small frying pan with low calorie cooking spray and place over a medium heat. Add the onion and fry for 5 minutes until softened.
Place the onion in a medium mixing bowl and add the breadcrumbs, garlic granules, bacon, cranberries, orange zest, rosemary, thyme and season with salt and black pepper. Mix to combine.
Add the egg, a little at a time, and stir in until the mixture is of a suitable consistency to hold together. You may not need to add all the egg. Divide the mixture into 8 and roll into 8 small balls.
Place the stuffing balls on the lined baking tray and spray with a little low calorie cooking spray. Place in the preheated oven and bake for 15-18 minutes until firm and golden. Serve at once with your Christmas dinner or Sunday roast.
